Is dynamic pricing the solution to the ailing hospitality sector? Stonegate Group, owner of the Slug and Lettuce, seem to think so as they plan to charge an extra 20p a pint during peak times. We are somewhat accustomed to paying more for certain goods or services at peak times, like train travel, holidays or even accommodation when events are taking place. So would paying slightly more for your pint, which has already seen a sharp increase in price be such a difficult thing to swallow? The hospitality sector has been ailing and as we saw recently continues to be hit by insolvencies despite being a busier season for the sector. But I wonder if this would only increase the divide between chains like Slug and Lettuce, who can probably get away with such a pricing model, and independents who may not have the demand in the first place and find sales falling if people do not view the dynamic pricing strategy favourably.

This is certainly true Rob and in addition given the limited supply, demand for less land hungry drive to properties - especially in retail parks - is increasing as the fight for market share intensifies. Whilst not to the same extent, rents for these units are also moving inexorably upwards.
