ANTIMICROBIAL RESISTANCE🧫 When bacteria, fungus, and other microorganisms learn to withstand the medications meant to eradicate them, this is known as antimicrobial resistance. In other words, the bacteria are not eliminated and can proliferate. Containing food-borne microorganisms that are resistant to antibiotics poses a direct threat to public health. Commensal or pathogenic strains with antimicrobial resistance genes provide an indirect risk to public health because they expand the gene pool from which pathogenic bacteria can acquire resistance characteristics. Numerous pathways exist for the contamination of food with genes and/or microorganisms resistant to antibiotics. 🦠The first method is the existence of microorganisms resistant to antibiotics in food that were chosen by the application of antibiotics during agricultural production. 🦠A secondary pathway involves the potential existence of resistance genes in bacteria that are purposefully added during food processing. 🦠The final method involves food processing-related cross-contamination with bacteria resistant to antibiotics. Antimicrobial resistance #AMR can be reversed by reducing the consumption of #antibiotics – according to a European multi-agency report. > The recently-published JIACRA IV study found that “E. coli bacteria in both animals and humans are becoming less resistant to antibiotics as the overall antibiotic consumption (AMC) is reduced.” > The report states that, overall, antibiotic consumption in food-producing animals within the EU decreased by 44% between 2014 and 2021. Do you know what ergot alkaloids are? Ergot alkaloids are mycotoxins produced by certain fungi, particularly Claviceps purpurea. These fungi infect cereals like rye, wheat, and others, forming dark growths called sclerotia on the grain, commonly known as ergot. ⚠️ Ergot alkaloids are harmful to humans and animals due to the severe and potentially life-threatening health effects of the toxins they produce. European regulations set maximum allowable levels for 12 specific ergot alkaloids in food, including ergometrine and ergotamine. Chronic exposure to these toxins mainly comes from the diet, with young children being most at risk. Our lab, Tentamus Agriparadigma S.r.l., has validated the ISO EN 17425:2021 method for detecting residues of ergot alkaloids in rye and rye-based food products! 🔬 We use LC/MSMS (liquid chromatography-tandem mass spectrometry), a sophisticated technique that provides high sensitivity, specificity, and precision in detecting these toxins. This method has been tested in interlaboratory trials and accredited by Accredia to ISO/IEC 17025.
