- Being angry with family does not mean you stop loving them. - Penne is for lunch and spaghetti is for dinner - There is clean sauce and dirty sauce. - When you eat long pasta you twirl the pasta in the plate - Espresso anytime but cappuccino only in the morning - Less is more when it comes to pizza toppings - You dig out the inside of your bun first to make room - There are only 3 meats for sandwiches. - inflection and gestures to one syllable words can mean so much - Pasta first, then meatballs and salad together - You know there are many uses for the wooden spoon - Nona’s kitchen has the best smells - Pastries in the shape of fruit - There is no butter at the table - Wasaga for the day and keeping the risotto warm in the trunk - First sip of wine when you’re 5 - Friends & family are the same - Cousins are like brothers and sisters - Take your shoes off at the door - Flowers in the front yard vegetables in the back - There’s usually a connected relative - There’s a dedicated room in the house for jars of sauce, antipasto, pears and an assortment of hanging cured meats - It’s not yelling, it’s just the way we talk - Watch out for the look. - Garlic is a key ingredient in most dishes

Prepare all the ingredients..... Choose the bread, the dressing, the salad, the tomatoes, the minced meat plus other accessories. What quality of the burger and accessories are you satisfied with? Decide whether you fry the burger in the kitchen or on the grill. What texture and flavors do you want to feel when you eat your burger? When and what do you flavor the burger with? Right temperature, right cooking time and right timing. These are some things I think about when I cook burgers. This is FOOD JOY for me.

Start by cooking the pasta in a large pot of boiling salted water until it is al dente. Drain the pasta, reserving some of the pasta water. In a large skillet, cook the diced pancetta or bacon until it is crispy and golden brown. Remove the pancetta from the skillet and set it aside. In a bowl, whisk together eggs, grated Parmesan cheese, and black pepper. Set aside. Add the cooked pasta to the skillet with the pancetta and toss to combine. Remove the skillet from the heat and let it cool for a minute or two. Slowly pour the egg and cheese mixture over the pasta, tossing constantly to coat the pasta evenly. If the sauce is too thick, thin it with some of the reserved pasta water. Serve the spaghetti carbonara immediately, garnished with additional grated Parmesan cheese and chopped parsley if desired. #GRAPHIDESING #PRODUCTDESING
