Grilling? Let it rest: After grilling, allow your meats to rest for a few minutes before slicing and serving. This allows the juices to redistribute evenly throughout the meat, resulting in juicer and more flavorful grilled dishes!

Oldie but a goodie! Who has worked with Beef Coulotte? What is your professional opinion on this cut? This was a dish we worked on when I was cooking in Northern, VA. This Coulotte was cooked Sous-Vide for 12hrs in Duck Fat, Salt, Thyme & Garlic. Pan Roasted in Foaming butter to order. Served with Pistachio Nougat, Smoked- IPA glazed cioppolinis, Sauteed Kale and Beef Jus I think Coulotte is one of those cuts of beef that has to be really high quality to impress people. There’s no middle ground. What are some of your favorite ways to prepare this cut of meat? What are your thoughts ?

When cooking a burger place the burger on a hot 140-145 degree grill. You should rotate the burger after to prevent sticking. If you don’t rotate the burger you can possibly loose meat onto the grill. Two rotations is all the burger needs. You will know when it’s time to flip the burger when the juices come up the top and over the sides. Again rotating the burger to prevent damaging the product.

A person was cutting off ends of a roast before cooking it. Every time they made pot roast, they cut off the ends. Someone asked them, why do you cut off the ends of the roast? This does not make sense. You are wasting perfectly good meat. The person didn't know why. Just knew that the mom and grandma always did that. So they asked mom why she always cut off the ends of a perfectly good pot roast. Turns out, she did it because grandma did it. So, they asked grandma. Why do you always cut the ends of a roast? Is that a secret to make it better? You know what grandma said? She cut off the ends because her cooking pan was small and the whole roast did not fit... Always ask why. Either you will learn something new, like a secret to the best pot roast. Or you will discover a much easier way to achieve the same result, such as cooking pot roast without having to trim it first. When was the last time you asked why?
