I started a craft soda company to solve an economic development problem... As VP of Economic Development for the South Chamber, I saw firsthand how our economic strategies and resources were missing the mark on a vital part of our local economy: the vibrant, innovative makers in San Antonio, specifically the Southside. This “makers economy” was underdeveloped, underfunded, and often misunderstood. I purposefully named our product Southside Craft Soda to bring visibility to this potential and to showcase what’s possible with start-up consumer goods. In the neighborhood we grew up with product makers at flea markets, side-of-the-road vendors, and talented mechanics innovating on every corner – everyday ingenuity that wasn’t always valued for what it was. So, how do we shift that perspective? First, we formed a San Antonio CPG group to connect and support local product makers. Next, we need to create an inventory of makers in our ecosystem to directly support their growth - start-up or established. We need to support scaling by becoming their customers (especially procuring locally made), develop local-centric resources and funding solutions for consumer goods manufacturing, and encourage these makers to expand their manufacturing footprint and headquarters right here in San Antonio. South Texas has unmatched talent in food, beverage, product innovation, and manufacturing. It’s who we are, and if nothing else, I hope this little soda company from the Southside has helped bring that to light.

This year marks Delicius’s 50th anniversary, and what better occasion than this one to bring back memories and stories of how we got here. In 2015 we published the book “Alice o Acciuga'' that tells the story of the creation of the anchovy industrial district in Parma. How could Parma, a city a long way from the sea, become the canned anchovy capital? The reasons are mainly linked to the birth and growth of the tomato canning industry that led to the development of technical expertise in this area. After many years and four generations of fish preserve entrepreneurs, today our city is home to the top preserved anchovy companies, which together account for more than 70% of the market.
