Chicken Tales - Let me tell you a story about rotisserie chicken I grew up in Grocery – it’s in my blood. I was lucky to have stellar leaders who taught me key lessons that have made me successful – if you’re on time, you’re late…never be afraid to hire people smarter than you are…and the golden rule… NEVER be out of rotisserie chicken at 5pm. Fred Morganthall, our president at Harris Teeter, had a hot button on store visits. Rotisserie chicken was the first place he went – were we ready for the dinner rush crowd? Did they look good? Was there variety? He knew that if you lost the easy ‘what’s for dinner’ protein, you might lose the entire cart…you might even lose the long-term trust of that mom if you were out enough times. Not only does this beg the question of #onshelfavailability and whether you have enough, but on the other end it highlights the #grocerywaste question. Rotisserie chicken isn’t like a can of soup, if you have too much at the end of the window of freshness, it takes labor or waste to deal with it.Balancing having enough and not wasting – driving down margin – for an item that has to have time to cook is a tough act to get right without data. That’s where having the right systems make all the difference. Systems that pay for themselves many times over within a couple months exist and can solve this and many more challenges.Look for systems that: 1. Prompt your team on which items need attention - either for out of stocks or excess inventory, and then 2. Use cognitive technology to identify the right markdown prices so you’re clearing inventory at the highest margin possible, and ultimately 3. Will predict if you likely can’t sell it and should go ahead and donate or send to a third party.
