Coffee on airplanes is nothing new. Most international commercial airlines have been serving coffee onboard for decades now. What has changed in the past few years, however, is the quality of coffee offered on commercial flights. With most airlines partnering with larger multinational roasters and companies, there has been little focus on using higher-quality coffee. But it appears that more airlines are starting to offer specialty coffee. On 11 October 2023, Alaska Airlines – the fifth-largest airline in North America – announced it will serve Stumptown Coffee Roasters on all its flights by 1 December 2023. The two companies developed a custom blend which is “specially crafted to be enjoyed up in the air” as filter coffee. This signals the end of Alaska’s partnership with Starbucks, and is a clear indication that the airline wants to serve higher-quality coffee to its passengers. So is this also a sign of specialty coffee becoming more popular, or is the Stumptown-Alaska Airlines collaboration to be expected? So I was recently travelling via Indigo airlines and observed that they are using interesting tricks in their new meal pricing. . . Previously you could buy a beverage separately and purchase a solid food item separately. A beverage would cost around Rs 100-150 and a food item would be in the range of 250-300. But now they have used a 'bundling technique' where in you can't separately purchase a beverage anymore. A beverage comes free with a food item and they are proposing that as a 'Buy one get one free'. And they have obviously jacked the price of the food item to ~ Rs 350-400. So with this, Indigo has increased the average order size of their customers from a ~Rs 200 to ~Rs 300. For a business this is good news, specially when they earn most of their margins from ancillary services like meal sales, seat upgrades and extra luggage charges. As a customer, not everyone will like this and may even feel cheated. Which can backfire badly for the brand. What? ONLY 15 drinks a day? Most cruise lines, including Royal Caribbean, offer unlimited beverage packages that include all the alcohol you can safely consume.  You will get slowed down or shut off if you are visibly intoxicated or slurring your words, but if you have the tolerance, they will keep serving you. Someone might try to fight a bartender after two glasses of wine, while another passenger can line up tequila shots all day long without ever seeming all that drunk. Bartenders and security will slow people down to make sure they're not getting too drunk before the effects hit. They will also try subtle tactics like leaving the passenger a bottle of water or just finding different people to serve. Every cruise line wants to keep its passengers safe and coherent, but of the major cruise lines, only Carnival (CCL) places a daily limit on alcoholic beverages served to passengers. Whether you buy the Cheers unlimited beverage package or are paying a la carte, Carnival will let you consume only 15 alcoholic beverages in a day. That's a hard limit and there's no way to get around it.

#Indigoairlines serves pre-ordered food only by the exactly ordered items and does not allow a passenger to change the choice at the time of delivery for any reason. That's fair and right. But if the pre-ordered item accepted by the airline is not available at the time of delivery, the airline makes its own choice for replacing the pre-ordered food with a similar item without asking for the customer's next choice. The crew are left with no option but to thrust the item of the airline's choice on the passenger. That's unfair! The inflight food and beverage revenue of #Indigo6E is said to have clocked around Rs.760 Crores in FY 2023 (USD 85 mn) with an approximate gross margin of 70%.
