Summer is here! Do you know what fruits and vegetables are best to eat in the Summer season? This month, we'll share a featured recipe each week from Chef Denise Roa, Director-Clinical Nutrition Services at IOH. Every recipe highlights fruits and vegetables that are plentiful during the Summer months. This week, our featured recipe is Watermelon Ceviche (no fish or seafood): Prep Time: 20 mins Servings: 4-6 INGREDIENTS: 1 medium seedless watermelon, cut into 1/2" cubes 4 Persian cucumbers cut in half moons 2 cups shelled edamame 3 scallions sliced thin 1/2 bunch mint sliced thin 3 TBSP toasted sesame seeds 1 small Serrano chile sliced thin (optional) Combine in a large bowl. FOR THE SAUCE: 10 oz. tamari (gluten free soy sauce) 3 oz. water 2 oranges - fresh squeezed 2 lemons - use 1 for lemon zest and juice from both lemons 2 limes - fresh squeezed 2 TBSP sesame oil Place all ingredients in a medium bowl and combine. Add sauce to watermelon mixture 1/2 hour before serving. Serve with baked tostadas and sliced avocado 🥑. Enjoy!
