"If you want to understand the near future of plant-based foods, it is likely to be about cheaper methylcellulose replacements, natural emulsifiers, better value flavor systems, new types of protein extraction and novel methods of achieving meat-like textures. It will be evolution not revolution, slowly improving what we have to make it cheaper, better quality and more sustainable. Once price parity becomes possible, a huge amount of other stuff will fall into place." https://lnkd.in/gyY3UMnW Thanks to Frank Jong for his post that alerted me to this article by Chef Anthony Warner. 🌱 Plant-based meat had a peak in sales in 2020, but data from Mintel shows that fewer than half of Americans who tried them repeated their purchase. One reason is the taste difference between plant-based and animal-based products, along with concerns about ingredients and health benefits. Unfamiliar ingredient lists and high sodium levels have impacted perceptions. 🚀 However, there's still significant growth potential for plant-based meat. Innovation is key to creating truly disruptive products and ingredients that can address these concerns and bring more people on board with the plant-based movement. Let's keep pushing the boundaries of sustainable food options! 🌍 #PlantBased #Sustainability #Innovation #FoodTech #Meatanalogues #alternativeproteins https://lnkd.in/gvGcbAQr

We know that the term "upcycled" is trending nowadays. But have you ever heard the term "upcycled foods"? Upcycled foods are a promising solution to reduce food waste because the upcycling process involves transforming food by-products and waste materials into new and edible food products. Consumers tend to be skeptical of novel foods and food processing technologies, making it crucial to research the factors influencing consumers’ acceptance of upcycled foods. Such research can inform the development of evidence-based communications and marketing strategies that promote the success of upcycled foods in retail settings. In a recent study published on Food Quality and Preference journal, Elsevier, the researchers identified three categories of key factors influencing consumers’ acceptance of upcycled foods, as shown in the figure below: - sociodemographic characteristics - psychographic characteristics - product characteristics The findings suggest that the most important factors influencing consumers’ acceptance of upcycled foods were: - gender - educational level - food (technology) neophobia - environmental awareness - food waste awareness - inclusion of logos, labels, and certifications In addition, communicating information about how upcycled foods positively contribute to health, nutrition, sustainability, food waste reduction, and the economy can increase consumers’ acceptance. These findings can advance future research and practice to promote upcycled foods consumption.
