Mood is very important!
I usually don't 'feel' like having certain types of wines at certain times. Why is this? Wines have so many flavour characteristics that it feels like I'm getting into a conversation with it. Some days I want a bold and complex conversations, other days just hit me with the oak bomb or a crisp and light patio sipper.

4 tips to order wine at a restaurant confidently!
1. Talk to the on-floor sommelier about the wine you like drinking. You can give them some descriptors about your preferences. Like perhaps you like a fruity wine, or you prefer a dry style of wine. This will help them understand your palate and suggest a wine to you accordingly.
2. If they suggest something and the price point is out of your budget, don’t worry! It’s completely okay to point at another wine that might interest you, and is possibly within the price point you’re looking to spend.
3. Be open to the sommelier’s recommendations. Ask them what they would pick. Sometimes they’ll tell you a story behind a wine which can be quite interesting. Knowing their two cents always helps!
4. Ask for a taste. I’ve had instances where the wine I was ordering wasn’t available for a tasting pour, but the sommelier generously opened up a bottle and gave me a sip to taste. So don’t be afraid to ask!
Save this for the weekend so when you’re out at a restaurant you can order your wine with confidence!

Standard markup for a bottle of wine in a restaurant is typically 2 - 2.5 times the retail price if purchasing at a store for yourself. But why?
The margins with food are so tiny that it is the beverage program that makes up for that and saves most restaurants.
Cocktails are typically 5 times what ingredients add up to but its the expertise that goes into making the cocktail and people are typically not, “oh I can make that at home for less.”
Wine is no different. There is expertise in selecting the right bottles for the wine list that pairs with their food and slecting the perfect glass to serve the wine in (which are frequently broken and needing to be replaced). There is also expertise and training in how the wine is stored, presented, opened and poured.
