Whisky giant Chivas Brothers has revealed plans to build a new distillery on the isle of Islay. It will be the first time the Scotch maker, which is responsible for single malts such as Aberlour and The Glenlivet, has had a presence on the island. An application has been submitted to Argyll and Bute Council for a site at Gartbreck Farm in Bowmore with a decision expected by late March. Islay is already one of Scotland's major whisky attractions with 10 distilleries including Laphroaig, Ardbeg and Lagavulin. The oldest distillery on the island is Bowmore, which began operating in 1779 and is currently owned by the makers of American bourbon brand Jim Beam. Chivas Brothers are partnering with Islay Estates on the new distillery, which said it would work closely with the community so there was minimal impact to residents. Planning officials said the whisky makers hoped to make a "significant positive contribution" to Islay. Baltimore’s reputation as a natural place to celebrate has been supported by the fact that it has been home to over 100 large-scale breweries since the mid-18th century. While there are multiple craft breweries plying their craft today, none are at the scale of times past. For example, the J.F. Weissner & Sons Brewing Company housed a 10,000-bushel grain elevator in its central tower at 1700 North Gay Street, with an annual output that reached 110,000 barrels of beer by 1919, earning it the title as one of the highest-volume breweries in Maryland. The company didn’t survive Prohibition in the 20s and was sold to a succession of beverage companies until 1973, when it closed for decades, despite being list on the National Register of Historic Places. Renovations helmed by Struever Bros. Eccles & Rouse, and aided by Gotham Development LLC in partnership with Baltimore City, brought the building back into service in 2009. Today it is the headquarters for social services agency Humanim. #TBT

Britain’s oldest brewer Shepherd Neame Ltd has posted record revenues and a “good” uplift in profit as it pivoted away from the off-trade to focus on its pubs. The group, which own almost 300 sites across Kent and the Southeast, was boosted by its estate of London pubs in the 53 weeks to 29 June. Revenues increased 3.6% to £172.3m, with like-for-like sales up 4.9%. Like-for-likes sales inside the M25 jumped by 14.5%, while outside London growth was a more modest 1.1%. Total beer volume at the brewer declined 12%, while own brewed volume sank by 17.2% as Shepherd Neame moved away from lower margin off-trade business to concentrate on its pubs. Divisional revenue in brewing and brands fell 7.4% to £52.7m as a result, underlying operating profits in the division improved to £1.6m. #Pubs #Brewing

Baby Beef Wellington Once upon a time in the kitchens of "One if by land, Two if by sea" a charming cottage restaurant in the West Village (still open!) we would make over 50 of these Beef Wellington individual portions a night. Cooked to temp! Well Done took forever if memory serves so you always had one sandbagged. This version gets foie pate to enrich the lean cut filet mignon. The mushroom duxelles mixture is the bulk of the prep but can be prepared well in advance and is great to have on tap for all sorts of things like grilled cheese or spread on crackers or eat it by the spoonful. Pro tips: get Prime beef, season and sear it well, keep the puff pastry as dry as possible (I forgot to keep the bottom protected with duxelles) and cook it in a hot oven to get good coloring fast.

Melbourne’s latest Ritchies Stores in Balnarring has observed fantastic growth around local products. In August, we announced our investment in Dunnet Bay Distillers project to create a new whisky distillery within the former derelict Mill at Castletown in Caithness. The mill was originally built to feed workers in the local flagstone industry in the 1800s, which once employed up to 500 people, but later fell into disrepair.
