Who said you can’t make a pumpkin spice latte at home? 🎃☕️ Ingredients: 👉 250ml milk (or any non-dairy alternative) 👉 2 tablespoons pumpkin puree 👉 1 tablespoon sugar (or more, to taste) 👉 1 tablespoon vanilla extract 👉 1/2 teaspoon pumpkin pie spice (plus a little extra for garnish) 👉 1/2 cup strong brewed coffee or 1 shot of espresso 👉 Whipped cream (optional) Instructions: 1. In a saucepan, combine the milk, pumpkin puree, sugar, vanilla extract, and pumpkin pie spice. Heat over medium heat, stirring occasionally until hot but not boiling. 2. Once heated, remove the saucepan from the stove. Use a whisk or a frother to froth the milk mixture until it becomes foamy. 3. Pour the brewed coffee or espresso into a mug. 4. That means it's time to make this healthy pumpkin pie recipe that the whole family can enjoy guilt-free. 🎃 ⠀ Ingredients: ⠀ 1 can pumpkin puree (15 oz.) 2/3 cup maple syrup 1 tablespoon vanilla extract 🥄 2 eggs plus 1 egg yolk, whisked 1/2 cup plain almond milk 1 tablespoon pumpkin pie spice 1/2 teaspoon ground cinnamon Pinch of salt 🧂 1 unbaked pie crust (9 inches) ⠀ Instructions: ⠀ 1. Prepare mini muffin tins with graham cracker crusts (by mixing crumbs and butter). 2️⃣ Beat cream cheese and sugar until smooth. Temper the egg mixture by slowly adding the hot cream, whisking constantly. 4. Return the mixture to the pan and cook gently until it coats the back of a spoon. 5. Strain the custard and add vanilla extract. 6. Chill thoroughly—at least 4 hours or overnight. Here's a dish that's a little more unique: Pumpkin Bread Pudding! INGREDIENTS: 1 loaf (16 ounces) raisin bread 1 can (12 ounces) evaporated milk 1 can (15 ounces) solid pack pumpkin 1/2 cup plus 3 tablespoons sugar, divided 3 eggs 1 1/2 tablespoons pumpkin pie spice 1 tablespoon orange zest 1/4 cup pecans, chopped Vanilla frozen yogurt or thawed, frozen fat-free whipped topping (optional) DIRECTIONS: Preheat oven to 400°F. Lightly brush Medium Rectangular Baker with canola oil using Chef's Silicone Basting Brush. Slice bread into 1-inch cubes; set aside. Pour evaporated milk into small microwave-safe bowl; microwave on HIGH 3 minutes or until hot. In large bowl, whisk pumpkin, 1/2 cup of the sugar, eggs, spice blend and orange zest until smooth. Gradually whisk hot milk into pumpkin mixture. Place half of the bread cubes over bottom of baker; pour half of the pumpkin mixture over bread. Top with remaining bread cubes and remaining pumpkin mixture. Sprinkle pecans evenly over bread. Sprinkle with remaining sugar. Bake 25-30 minutes or until set. Let stand 15 minutes before serving. Serve with frozen yogurt or whipped topping, if desired.

And there's no need for an ice cream maker! https://lnkd.in/g7xdjfx Serves 8 to 10 INGREDIENTS 2 pounds fresh strawberries, rinsed and hulled (this may seem like a lot, but it's really not) 14-ounce can sweetened condensed milk 1 1/2 cups heavy cream 1 teaspoon vanilla extract 1/2 cup mini semisweet chocolate chips INSTRUCTIONS In a food processor, combine the strawberries, sweetened condensed milk, heavy cream, and vanilla. Process until the strawberries are broken into pieces (the size of the strawberry pieces is totally up to you - leave some big chunks if you want). Transfer the mixture to a 9x13-inch baking dish, cover with plastic and freeze for 1 hour, until thick. Remove the ice cream from the freezer and fold in the chocolate chips. Cover with plastic and freeze until firm, about 2 hours. To serve, either pull the ice cream from the freezer 10 minutes before scooping, or use a scoop that's been warmed in hot water.
