Most are keen to sample local dishes, while others plan their itinerary around visits to popular restaurants. 61% also explore the origins of the ‘must-try’ dishes of the places they’re visiting. This presents hoteliers with more opportunities to improve revenues. For one, they can feature more local dishes and source ingredients sustainably.
