I recently attended an insightful webinar on " Root Cause Analysis: Adopting Standard Practices for the Food Industry"' by International Association for Food Protection and Ontario Food Protection Association . The U.S. is a leading producer of pecans globally. Little food safety guidance currently exists for pecan shellers despite their significant contributions to the nation's gross domestic product. In the September/October issue of Food Protection Trends, a survey identified typical food safety practices for a subset of North American pecan shellers. Friends and colleagues, Digital online ordering now accounts for about 40% of total restaurant sales in the US, and has grown 300% faster than dine-in sales since 2014. The US is now the second largest online food delivery market behind China, with an estimated $218 billion in revenue in 2022 generated by digital food ordering/delivery. Food delivery now includes next day mail order of menu items normally prepared and wrapped for immediate consumption. The augmented volume of sales that must be prepared in the same kitchen (for most of the foodservice industry) can often be too large to be accommodated by the labor needed and kitchen space/equipment design; leading to quality and food safety issues impacted by the large number of virtual customers that can order from any one kitchen via multiple delivery service apps. Several foodservice enterprises have tackled this problem using digital make-lines (Chipotle Mexican Grill), mobile ordering pick up restaurants (Chick-fil-A Restaurants), and food prep robotics (sweetgreen), but many have not and can be at higher food safety risk. I wrote this article to suggest ways the food service industry can reduce this risk highlighting many successful foodservice business models.
