Pound cakes are generally dairy-free cakes that are quite rich and heavy in texture. Here's an easy pound cake recipe you can try out.
Amari Vanilla Pound Cake Recipe:
All Purpose Flour - 220 gms or 1 3/4 cup
Baking Powder - 3 gms or 1 teaspoon
Sugar - 120 gms or 3/4 cup
Butter - 130 gms or 3/4 cup
Salt - 1/4 teaspoon
Eggs, medium-sized - 4 pieces
Vanilla Flavor - 5 ml or 1 teaspoon

Yum! The 29th of May each year is National Biscuit Day, so whether you prefer a sweet treat or a savoury cracker, it is the perfect excuse to enjoy as many guilt-free biscuits as you would like! 🍪
It is also half-term for many this week, so why not celebrate the day by baking some biscuits with your young ones? 🥣
This simple recipe can be adapted to suit your taste 👇
Ingredients:
🧈250g butter, softened
🥄140g caster sugar
🥚1 egg yolk
🧪2 tsp vanilla extract
🌾300g plain flour
Step 1:
Mix the butter and sugar in a large bowl with a wooden spoon, then add the egg yolk and vanilla extract and briefly beat to combine.
Step 2:
Sift over the flour and stir until the mixture is well combined - don't be afraid to use your hands at the end to give everything a really good mix and press the dough together. Chill the dough for 20-30 minutes.
Step 3:
Preheat the over to 180C/160C fan/Gas 4. Roll out the dough, cut it into shapes. Bake on a non-stick baking tray for 10-12 minutes until pale golden.
Carefully transfer to a wire rack to cool and crisp up.

🍪 2 eggs, separated
🍪 80g sugar
🍪 160g self-raising flour
🍪 ½ tsp baking powder
🍪 Aniseed (to sprinkle)
1. Preheat your oven to 180℃ / 350℉.
2. Whisk the egg whites into stiff peaks.
3. Whisk the egg yolks & sugar together in a separate bowl.
4. Gradually add the flour and baking powder to the egg yolk & sugar mix, whisking together to achieve a thick batter.
5. Fold in the egg whites.
6. Scoop level teaspoons of the mix about 2 inches apart on a greased or lined baking tray. Sprinkle aniseed on top of each biscuit.
7. Bake for 12-15 mins until golden.
8. Cool fully on a wire rack.

INGREDIENTS
• 1 cup MAKOMAS Yuca
• 2 cups queso fresco
• 1 ½ teaspoons baking powder
• 2 eggs
• ¼ teaspoon sugar
INSTRUCTIONS
1. Pre-heat the oven to 450°F.
2. In a food processor, place the MAKOMAS Yuca, cheese, sugar and baking powder. Process until well combine. Add the eggs slowly while food processor is running.
3. Divide the mixture into 12 equal size portions and shape into a ball.
4. Place on a baking sheet lined with parchment paper and bake for about 15 minutes or until golden on top. Serve warm.

Here is a dessert you can make today and enjoy after your Sunday meal
1 cup unsalted butter, softened
3/4 cup granulated sugar
3/4 cup brown sugar, packed
1 teaspoon vanilla extract
2 large eggs
2 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup semi-sweet chocolate chips
1 cup cheesecake filling (store-bought or homemade)
Directions:
Preheat oven to 375°F (190°C).
In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy. Add vanilla and eggs, one at a time, mixing well after each addition.
In another bowl, whisk together flour, baking soda, and salt. Gradually add to the butter mixture and mix until just combined. Fold in chocolate chips.
Drop tablespoon-sized balls of dough onto a baking sheet, spacing them about 2 inches apart.
Press a small indent into the center of each dough ball and spoon a teaspoon of cheesecake filling into each indent.
Bake for 10-12 minutes, or until the edges are golden. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
