On a recent visit to Cork, Stuart made a trip to visit the Midleton Distillery, which is about a 20 minute drive from Cork City and it is located in the quaint town of Midleton. The original Old Distillery was in production for 150 years and was founded in the early 19th Century by the Murphy Brothers, before a new adjacent distillery complex was built in 1975. The new complex is Irelands largest Whiskey Distillery and produces some 24 million bottles of whiskey each year. It is the home to seven iconic brands – Jameson, Redbreast, Powers, Midleton Very Rare, The Spot Whiskeys, Method and Madness and Knappogue Castle.
A visit here begins with an informative audio-visual presentation before being guided through the production of Irish Whiskey and the old workings of the distillery. These old workings include the World's largest Pot Still, a 150 year old Water wheel which would have generated electricity for the site and stops at the original Malting Houses, Corn Stores and Still Houses. Discover the differences between Single Pot Still Distillation and Continuous Distillation and finish with a whiskey tasting in one of the original storage warehouses.
It was a very interesting tour from start to finish, I would highly recommend a visit on your next visit to Cork.

A Boot Hill is a burial ground for the unclaimed, the poorest, and those hanged for misdeeds. For some, a Boot Hill was necessary - it got them the first few steps to heaven. And Dodge City, the fabled town of the old west, has the original Boot Hill.
Boot Hill Distillery isn't located on top of the hill, exactly (it's quite close), but it is built on those stories. Images of Wyatt Earp and other famous lawmen and outlaws grace their bottles while the whiskies are made with grains grown as close nearby as possible.
The brand is, after nearly a decade, still relatively young. Its whiskies are maturing, and its focus on wheat - the staple crop of Kansas - is bearing fruit in what's already out. We go through the founding story, how elements of the old west and the rich history are interwoven into the bourbon, wheat whiskey, and other spirits, and where Boot Hill is going from here.
Thanks everyone for listening, and thank you to Lee for entering the Whiskey Ring!

Irish Whiskey - like a phoenix from the ashes! (Part 1)
I have been following developments in Irish whiskey with great interest for over ten years.
The situation of Irish whiskey has been quite challenging in the past.
In 1974/75, four out of six distilleries were closed, with only Bushmills and Midelton surviving.
In the following 12 years or so, the situation remained unchanged.
In 1987, John Teeling opened another distillery, the Cooley Distillery.
A fourth was added in 2003 with the West Cork Distillery. In 2007, John Teeling reopened the Kilbeggan (Locke) Distillery.
As a result of the global whisk(e)y boom and the growing craft distillery scene, whiskey production in Ireland became increasingly attractive. New distilleries emerged and old brands were revitalised.
Today, 61 whiskey distilleries are once again active in Ireland and a further 28 distilleries are in planning or under construction.
Even if the whisky market is currently weakening somewhat, we are confident that the diversity of Irish whiskey will remain for a long time to come.

Seven Three Distilling Co., in partnership with our Louisiana Distillers Guild partners, were excited to host a national/international media group recently in regards to the up and coming Louisiana Rum. Check out the latest article from Carlo DeVito about that visit and our distillery.
Attention to detail is crucial when it comes to installing your Hex Wine Cellar. 🍷🍾🥂
Ensure that your underfloor heating pipes are placed 300 to 400mm away from our steel shuttering rings to avoid any transfer of heat into the cellar. 🥵

## Artisanal or Alarming? The Hidden Dangers in Craft Gin Production 🍸🚫
I recently stumbled upon a video that left me shaken, not stirred 😱 - and not in a good way! It showed someone hand-shaking gin before bottling. While it might look quaint and artisanal, it raises some serious red flags 🚩
**Safety Concerns vs. Public Perception:**
- 🦠 Potential contamination risks
- 👏 Yet, consumers often praise these "handcrafted" methods
- 🏆 Some of these products even win awards in competitions!
**The Blind Spot in Blind Tastings:**
Judges in blind tastings can't "see" these questionable techniques 🙈 They focus on:
- 👃 Aroma
- 👅 Taste
- 🎨 Appearance
But what about the unseen dangers? 🕵️♀️
**HACCP and Regulatory Concerns:**
- ❌ Likely non-compliant with HACCP standards
- 🏭 Violates good manufacturing practices
- 🧼 Lacks proper sanitation controls
**The Bigger Picture:**
It's concerning that products made without proper health controls are not only sold but celebrated 😕 This raises questions about:
- 🏅 The criteria used in spirits competitions
- 👨🍳 The romanticization of "artisanal" techniques
- 🧑🔬 The need for better consumer education on food safety
While we all love a good craft spirit, shouldn't we prioritize safety over spectacle? 🤔 Let's appreciate the art of distilling without compromising on health standards!
What do you think? Is the charm of "handcrafted" worth the risk? Share your thoughts below! 💬👇

It has been a little bit since I last visited with Marcia, and A LOT has been happening in the interim. To say that it has been a crazy, great, busy year for both her and the Ironroot Republic team would be a vast understatement.
This dynamo of a human was just awarded the Icons of Whiskey Distillery Manager of the Year award by World of Whiskey. AND, building on a history of award-winning liquids, the Ironroot Republic team and brand have launched and been lauded for their recent creations as well.
2024 World of Whiskey - Ironroot Republic Hubris Straight Corn Whiskey - Gold
2024 World of Whiskey – Ironroot Republic Apotheosis Finished Bourbon – Bronze
2024 World of Whiskey – Ironroot Republic Harbinger Single Barrel Bourbon - Bronze
2023 USA Today 10 Best Craft Whiskey Distilleries - Readers’ Choice Award
2023 World of Whiskey - Icons of Whiskey Master Blender/Master Distiller – Jonathan Likarish - Highly Commended
World of Whiskey 2023 - Ironroot Republic Apotheosis - World's Best Finished Bourbon
World of Whiskey 2023 - Ironroot Republic Hubris - World's Best American Corn Whiskey
Marcia attributes these accomplishments to a strongly held belief that "we do not achieve life's goals alone". She encourages team building with people from diverse backgrounds and life experiences. She also advocates for the suspension of personal ego in the pursuit of knowledge. Her favorite quote explains her philosophy and it is hard to argue with her when her family’s operation demonstrates the results achieved with the application of it.
“Opinion is really the lowest form of human knowledge. It requires no accountability, no understanding. The highest form of knowledge… is empathy, for it requires us to suspend our egos and live in another’s world. It requires profound purpose larger than the self kind of understanding.” ― Bill Bullard
Her words of wisdom for us all? Do not underestimate yourself or your teammates. Much can be achieved with the suspension of ego and the drive to achieve.

Hey Distillers, the IBWSS state distillers webinar video is now out! It is a good catch up call on whats going on in different states, opportunities in making new products, compliance updates, sustainability and more.
Speakers include Geoff Longenecker (San Diego Distillers Guild), John Granata (New Jersey Craft Distillers Guild), Aaron Bergh (Paso Robles Distillery Trail), President & Distiller (San Louis Obispo Distillers Guild), Teresa Casey (New York State Distillers Guild), David Cohen (Florida Craft Spirits Association).
Check out video here. I am sure you will get some hints to plan your straretgy for 2024. One good question that I loved the answer was:
Q: Are you building DTC infrastructure and sales?
A: Lot of states get temporary DTC laws which means distillers only have 1-2 years to do DTC which is forcing them to not invest for long term as they don't know if the law will change and regulators will stop DTC. And that is one reason distillers are not able to invest heavy in building DTC capabilities.
These group of amazing speakers will also be coming to the upcoming International Bulk Wine & Spirits Show where I will be moderating the panel of state distillers associations in July.
