Avoid tequilas labeled "Mixto," as they contain a blend of agave and other sugars. 2️⃣ Understand the categories: Blanco is unaged, offering pure agave flavor. Reposado is aged up to a year for a smoother taste. Añejo and Extra Añejo are aged longer, providing rich, complex flavors. 3️⃣ Inspect the bottle: Quality tequila is often found in well-crafted bottles. "Break the Rules" — this imperative is an invitation that I often readily heed, so I was predisposed to appreciate this recent John deBary piece in Punch. In "To Build a Better N/A Cocktail, Break the Rules, the writer asks if rather than riffing on cocktail classics in attempts at mimicry, "...is there something fundamentally different about nonalcoholic cocktails that necessitates an entirely new way of thinking about drinks? A way of thinking about drinks that leaves behind the genealogical, Mr. Potato Head mindset in favor of something more expansive, more culinary and more centered around the experience of the person drinking than around any pre-existing concepts of how cocktails should be structured." To my mind, the most exciting adult N/A drinks take a culinary approach, with an eye on the occasion. This is my approach to product development at For Bitter For Worse, and also why our four expressions taste so different from each other, rather than variations on a theme—I was thinking about distinct flavor profiles and drink occasions, rather than, "how can I make a N/A negroni? or old fashioned" deBary states "And while the quest to make the drinking experience as equivalent as possible for both the alcohol drinker and abstainer is a noble one, that doesn’t mean the experiences must be indistinguishable. For a growing number of bartenders, breaking free from the familiar—and useful—beats of cocktail orthodoxy has yielded far more success. 'I don’t want the veggie dog of whiskey,' says Austin Hennelly, bar director at Los Angeles restaurant Kato.
