But when I was walking through Quincy Market at Faneuil Hall Marketplace the other day with my wife, Barbara, she added a fifth P to the list, pizza, specifically Regina Pizzeria pizza. ☺️ Seriously though, If you are selling fast, casual food in any way, shape or form, Quincy Market is a great place to be located, as it's crawling with tourists and locals alike, each and every one of us looking for a good bite to eat. #TheLEADMindsetMotivationalMonday #Pricing How a Lobster meal motivated me to rethink my pricing. I celebrated my friend's birthday with a meal at a Michelin restaurant in the city. I fancied lobster. The cost of a whole lobster, without vegetables etc was £117. Those of you who run a #smebusiness know that you justify every pence you spend! I thought £117 will cover my food shopping for a month(in 2023 🤣) so I decided to go for 1/2 lobster. I was sharing this story with my friend, who is also a small business owner, and she exclaimed ''Dennise at my local fish shop, I get a whole lobster for £20. That price you paid is ridiculous!" I then started reflecting and said to her, let us think about the journey of the lobster from sea to plate. What does it cost at each stage of the journey. 1. Making the lobster available at the fish shop - fishing - transportation - packaging - storage 2. The customer(you)obtaining the lobster - petrol - storage until you are ready to cook it - time and money to clean it and season it - electricity/gas to cook it - time to present it on the plate Now there are many more additional cost to have that lobster in a restaurant. Think of the ambience, the chef's expertise etc. My friend then said " I guess that is why I only use home cooked lobster as it is cheaper to prepare it myself 🤣" This conversation made me think about the value chain for the services I provide. There are many stages between visitor to #clients . At each stage there is a cost, but like my friend, these costs are overlooked. Sometimes when making #sales I feel uncomfortable with pricing my product. Looking at the #valuechain for my products, has definitely motivated me to put a price on them with confidence. I don't know what to think about this one... The Wendy's Company is beginning to trial pricing for their restaurants where the SAME item of food costs varied pricing based on the demand ratio of their restaurant. If a restaurant is empty ... a burger costs $0.99 If a restaurant is busy ... the same burger costs 4x as much at $3.99 Although this should help with low footfall periods, hunger is a fairly quick renewable source of demand, my money is on all this will do is confuse customers into eating at their restaurants at different times of the day, lowering their footfall in peak periods as customers have already eaten at the cheaper periods. Squeezing the margins on their food lower and lower which isn't good for staff, shareholders or customers. It's a race to the bottom. #sales #marketing #wendys
