This thought came to my mind as I enjoyed my favourite morning breakfast of Kaya toast and soft-boiled eggs, a fusion of diverse culinary traditions 🍞🥚 Originating from Hainanese immigrants in Malaysia and Singapore, Kaya toast blends local flavours with colonial culinary practices. These immigrants, initially chefs in British homes, crafted Kaya—a delectable jam made from coconut milk, eggs, and pandan leaves—melding it with the Western practice of serving toast with butter and jam 🧑🏼🍳🍯 Accompanied by soft-boiled eggs, often seasoned with soy sauce and pepper, this breakfast pairing is a nod to British influences but with a local twist. The simplicity of soft-boiled eggs complements the rich, sweet spread of Kaya, creating a balanced and nutritious start to the day 🌿🥥 Pro-tip of the day: dip your Kaya toast into the eggs to create a combination reminiscent of french toast! Singapore's 🇸🇬 coffee ☕ scene is as diverse and rich as its multicultural heritage, thanks to its storied past as a maritime trade hub. 'Kopitiams' (traditional coffee shops) introduced by the Chinese 🇨🇳 in the 19th century served up brews that quenched European immigrants' caffeine thirst. Today, the heartwarming 'kopi', a robusta blend with a sweet twist of condensed milk and sugar 🍶🍚, remains a local favorite. Every year, Singaporeans consume a whopping 15,000 metric tonnes of coffee, which averages out to 2.6kg per person 📊. Over the last decade, specialty coffee has seen a sharp rise in popularity, particularly in the last three years 📈. Young coffee enthusiasts are now flocking to independent roasters and cafes, showcasing a shift in taste and preference 🌱. The Singaporean coffee market is buzzing with big names like Starbucks ☕. Then there's China's Luckin Coffee, which had its share of controversies, having been delisted from Nasdaq for inflating sales figures. Yet, they're making a comeback, targeting Singapore as their first step in global expansion. In 2022 alone, Singaporeans downed 122.7 liters of coffee for every person, averaging 330 ml daily 📊. But not all is rosy; Flash Coffee's closure shines a light on the cut-throat competition in the tech-driven coffee landscape 📱☕. Tech investors have pumped a cool US$373 million into coffee chains across South-east Asia, according to Preqin data 🌏💰. The pandemic stirred up the coffee scene further, with folks developing a taste for high-quality home brews ☕. Trendy now are lighter roasts paired with milk alternatives like soy, almond, and oat 🥛. 11 years in Vietnam, 8 of which spent to build my dream pastry brand Bakes Saigon, now with 3 locations and growing. Here's what I've learned: 1. Big goals can inspire but also overwhelm. Break it to bite sized (sorry) tasks can motivate you with small wins. It's also easier to delegate. 2. When I'm too busy to rest, exercise, have side hobbies, connect with friends, is exactly when I need to do so. Here's the twist: it helps me to be even more productive when I make time to refresh. 3. Beware of distractions: new ideas, shifting competitive landscape, intrapersonal issues. All these and more will pull you in different directions. Take a moment to assess whether you want to invest the time to pursue them. Early on, I chased after every intrusive thought and wasted a lot of time. 4. I don't have to do it alone. I had a lot to prove at 23 years old. But expanding my trust circle and complementing my strengths with other people's talents was game changing as I matured. 5. Pop my bubble. I thought I knew everything, that if I just did my own thing they (customers) would come. I learned to talk to people, try competitor's products, listen to my junior staff, go to community events, be open to feedback and changes. What are some of your own lessons? I'd love to learn more!

When exploring the vibrant cafe scene in Hanoi, I observed a few remarkable aspects of the people and their culture. - Managerial Freedom: Many cafes operated without a traditional manager, yet they ran smoothly. The staff displayed a strong work ethic and a sense of ownership. - No Hierarchy: Every cafe staff in Hanoi performed all the tasks - from taking orders to preparing drinks, washing dishes, and managing the billing. They did it all with a big smile. - No Cross Selling: They did not pressurise you to order something to eat when you only want to drink. Instead, they let the customers decide. - Strong Team Bonding: Staff had a great bond. They cracked jokes, slyly danced in a corner and teased one another. It added a unique energy to each cafe visit. As a customer, these observations naturally drew me back to these places. When I moved to Korea, some Korean behaviors seemed rude to me. But I learned that they are normal in Korea. In restaurants, I was shoched by the custom to loudly call the waiter. 📢 Moreover, I thought that people were constantly calling the waiter and asking for something! This seemed very rude to me at first because it’s so different from restaurant culture in the West. But I soon got used to it and even enjoyed the lively restaurant, especially in more traditional Korean restaurants. 아주머니, 김치 더 주세요! 🥢 Another example is personal questions that Koreans commonly ask, which can be considered rude in other countries. 😵 I also felt uncomfortable at first, when Koreans were asking me such personal questions but I learned to accept it as something normal. Finally, we all need to learn that people are different and cultures are different. What is considered normal to me, for other people may seem rude as well. We need to unserstand this and adapt. 👯 By doing that, we become more open-minded and get to know other cultures. We learn to accept differences and adapt to them. It is unfortunate to hear this news that Flash Coffee has shut its outlets in Singapore, apparently because of cash flow issues and its inability to pay its staff. I rather like Flash Coffee, among the more mass market coffee places in Singapore. I thought it served better quality coffee with nicely blended Arabica beans. It's not quite high end specialty coffee but it is better than the mass market "western" coffee chains in Singapore, not comparing with the kopitiam styled of more Robusta blends. I considered its #valueproposition to be one that serves quality coffee, at more affordable prices (it is cheaper that Starbucks or Coffee Bean or a boutique specialty coffee cafe) and it targets the customer that is going for the coffee rather than the cafe lifestyle so it does only take-aways and has nearly no sitting area at its outlets. Perhaps even with the right value proposition, it could still face these business challenges: 1. It did not #communicate its value proposition adequately to the customer. Some customers paying >$4 for a coffee may be expecting a cafe experience but the real value is the coffee itself and not the cafe lifestyle. 2. Expanding too quickly and not watching its cost. Flash Coffee is mainly located in high traffic areas and rightly so as it should be capturing the office going coffee drinker. At the same time, the rental at these locations are high. Moreover, the coffee business is highly labour intensive meaning that staff costs and rent, both fixed costs, are going to make up a significant portion of the operating costs of Flash Coffee. Sad to see it go. Hope that a similar concept can be revived with more financial and commercial sensibilities.
