Have you ever bought a fish and noticed an unpleasant #smell, prompting you to complain to the supermarket? Or, on the other hand, do you work in the #seafood market and are having problems with off-flavors? 🐟👃 A major challenge for aquaculture is the occurrence and accumulation of off-flavors in fish, which often make the fish unmarketable due to their distinct earthy and musty flavors, giving rise to negative consumer perception. But are only geosmin and 2-methylisoborneol the “villains”? What are the effects of depuration applied by fish producing companies on the chemical and sensorial characteristics of the final product? In our recent study, we characterized the odorant composition of Nile Tilapia fish during production and in the final product after two distinct depuration methods by applying a combinatory approach of sensory and analytical techniques.
