Restaurants is a list of “the best restaurants in Japan, selected by Japanese experts with international diners in mind.” For this year’s list we welcomed back the judges who have guided this project since its inception: Yoshiki Tsuji, Naoyuki Honda and Takefumi Hamada. Together they have selected 10 establishments from across the nation. Restaurants of any genre and in any location outside major cities are eligible. We are often told that Tokyo has the most Michelin-starred restaurants in the world; this list’s focus is on Japan’s regional areas. Selections are based on three principles: that the true expression of Japan’s land and climate is to be found in its regional areas; that it is important to unearth unique talents that might otherwise get lost in regional areas; and that Destination Restaurants is different from the many other popular restaurant rankings that exist. A City That Blends Its Cuisine with Its Economy: Gaziantep By Mehmet Öğütçü While wandering through the lavender-scented valleys of Provence, captivated by the allure of world-renowned gastronomic routes, my thoughts often drifted to Gaziantep, Turkey’s rising star. No matter how refined Provence’s flavors are or how deeply rooted its cuisine is in French culture, Gaziantep tells a different story—a tale of a centuries-old gastronomic heritage transformed into a model of economic development. Gaziantep’s Gastronomy Festival, growing in stature each year, feeds more than just our appetites; it nourishes the city’s economic structure. Beyond Gastronomy The first word that may come to mind when thinking of Gaziantep is “food.” Its cuisine is now recognized worldwide. Yet, the city’s success doesn’t end with its culinary achievements. Gaziantep has crafted an economic dynamism centered around its gastronomic prowess. The Gaziantep Gastronomy Festival has become one of the city’s most significant cultural and economic events, expanding each year thanks to both domestic and international participants. During the festival, hotels brim with guests, restaurants close their reservation books weeks in advance, and local producers and artisans see their sales double. However, most importantly, this festival demonstrates that Gaziantep’s development model extends beyond tourism and cuisine. The city has skillfully integrated agriculture, the service industry, and local production into a unique economic model. The Strength of Local Producers When we speak of Gaziantep’s cuisine…. The tale of two establishments, Coffee Break and Guan Hoe Soon, perfectly illustrates the delicate dance between tradition and innovation many in the F&B industry face. On the one hand, we have Coffee Break, a testament to modernity within Singapore’s beloved kopitiam culture, which thrives by infusing contemporary flavours into traditional offerings. Under the stewardship of the Sai siblings, this hawker stall blends classic local coffee with trendy infusions like taro and caramel rum, cleverly bridging the old with the new. On the other hand, Guan Hoe Soon, stewarded by Jenny Yap and her husband, Chef Raymond, anchors itself deeply in its Peranakan heritage while gently weaving in the essence of Hainanese culinary tradition. Here, time-honoured dishes like ayam buah keluak and bakwan kepiting not only tell a story of cultural preservation but also showcase the meticulous craft passed down through generations. With two different approaches, both establishments underscore a pivotal lesson for the F&B industry: success doesn’t necessarily come from choosing between tradition and innovation but from knowing how deeply to root oneself in tradition while reaching for the new. As leaders in hospitality, we must remain nimble and willing to experiment with new concepts while respecting the foundational values that define us. And it’s not just about food; it’s about identity, evolution, and the courage to adapt without losing the essence of who we are. As we navigate our own paths in this dynamic industry landscape, let’s draw inspiration from these models, understanding that our heritage can be a launchpad for innovation, not just a tether to the past. You can check out the full article on the link below. Let’s cherish and build upon the legacies that shape us, ensuring they thrive in a modern world hungry for both novelty and nostalgia. Welbilt can help you blend innovation and tradition in the best way possible. Rubin delves into Hong Kong's culinary landscape, asking if Hong Kong can be an international dining city with the absence of African and South American cuisines in the city's dining scenes Despite a diverse range of global flavours, these regions remain underrepresented. While a handful of eateries, like Andō and MONO, are gaining traction, there's a pressing need for more authentic representation. Chefs like Ricardo Chaneton aim to elevate South American cuisine in Hong Kong, bridging cultures through food. African establishments like Kaazi Restaurant & Bar and Paul’S Kitchen are paving the evolution of the city's dining landscape. However, to truly rival international food capitals, Rubin argues, Hong Kong must diversify its culinary offerings.
