Early summer harvest is always fun. The output is lighter, so you don’t get overwhelmed but you have daily output from a variety of plants. This is the time we have to gear up our processing operation, though. Regarding the late spring and early summer harvest, many of our peaches never made it to the processing "operation" because they were just eaten fresh. The most recent batch of peaches also went into various preservable forms – peach bourbon barbeque sauce, vanilla bean amaretto peach jam, peach cobbler, and fruit leather. We have one more batch of peaches ripening on the trees, then we will be done with peaches for the season. Partial peach haul:

Which broccoli type are you? Type S (Stalker): You appreciate the vegetable as is, thereby enjoying the creamy stalks, the chewy stems as well as the tender florets. You don't call yourself a 'Leave to Roots Person' for no reason. What lands in the compost is only the bark trimmed off the stalk. Type Q (Queen or King): You fall into the soft and tender category and only treat yourself to the very best. Cutting off the stalk as well as the trunks, you aim for the crown as nothing tops the tenderness of the florets. Completely ignorant of what you miss, you feel proud of your large contribution to the compost. Type K (Know-it-all): Blind for the value of the stalk, you break it off at the supermarket, leave it in the vegetable basket and only weigh the broccoli head on the scale. Why should you pay for something that has no value (TO YOU)? Your battle, after all, is to win as a consumer without taking into account the consequences of your actions to the retailer or the farmer. Not everyone can be as smart as you. There is obviously more to this than meets the eye. This categorization isn't limited to the broccoli. It applies more broadly. Your attitude of a Stalker, Queen/King or Know-it-all is likely to shine through. It could hardly be limited to the consumption of a particularly delicious vegetable variety, could it? This dish takes about 14 hours to prepare - but it definitely is worth the effort! Ingredients A Springbok, Impala, or any venison leg Marinade - 5 ounces (150g.) cocoa powder - 4 tablespoons salt - 2 teaspoons dried red pepper flakes - 1 teaspoon ground cloves - 2 tablespoons brown sugar - 2 tablespoons olive oil Vegetables - About 1.75 pounds (800g.)

Making homemade elderflower cordial is a fun family activity if you have access to elderflower trees - and so is collecting the blooms. Serve with sparkling water for a refreshing drink 🍹 Ingredients 30 elderflower heads 1.7litres/3 pints boiling water 900g/2lb caster sugar 50g/2oz citric acid (available from chemists) 2 unwaxed oranges, sliced 3 unwaxed lemons, sliced Method -Gently rinse over the elderflowers to remove any dirt or little creatures. -Pour the boiling water over the sugar in a very large mixing bowl. Stir well and leave to cool. -Add the citric acid, the orange and lemon slices, and then the flowers. -Leave in a cool place for 24 hours, stirring occasionally. -Strain through some muslin and transfer to sterilised bottles. The cordial will keep for 2-3 months in the fridge. Some call it “corn-stick,” others go with “sweet pole,” but we like to call it amazing — especially when you use those cute plastic corn on the cob handles. The perfect pre-summer date. (Although, for most home gardens, mid-June is still too early for the harvest.) But you can’t blame anyone for being in a hurry. The sweetness doesn’t hang around for very long. It has to be picked at its freshest, otherwise there’s a risk of — nothing really — it’s just slightly less incredible tasting. 🌽🌽 Nothing wrong with salt and butter, but something with more pizzazz, like say, miso butter, could offer an interesting twist.
