As the world becomes more conscious of the importance of sustainability, companies are exploring innovative ways to reduce their carbon footprint while providing consumers with sustainable alternatives. One such area of focus is fermentation-based protein, which is gaining traction as a viable alternative to animal products. With technological advancements, producing protein through precision fermentation and biomass fermentation has become more efficient and cost-effective than ever before. Fermentation-based products can offer a taste and texture almost identical to traditional animal products while providing nutritional, health, and environmental benefits. From 1990 to 2021, costs have declined by a staggering seven orders of magnitude, and today, the cost lies at around USD 80/kg protein. As feed conversion rates improve, production cycles become faster, and supply chains become shorter, costs are projected to fall to USD 1/kg protein by 2038. In fact, the cost parity of fermentation-based milk substitutes is expected to be in 2027-2028.
