In the hospitality and food-service industry alone, the cost of wasted food is over $100 billion per year. This project, led by Elena Belavina (Cornell SC Johnson College of Business), will explore using AI tools to reduce food waste in commercial food service establishments, a goal that would benefit food security, environmental resources, and private businesses’ bottom lines. Researchers will build and test AI assistants to help kitchen managers with front-line tasks that can reduce food waste, such as managing inventory, providing directions on how and when to produce foods, and detecting mistakes in food production decisions. Chicago’s IFT FIRST conference is in full swing with food scientists, nutritionists, policy makers, and more joining together to discuss the future of food.   Yesterday, Edible’s Executive Vice President Adelaide Feuer (Geik), RD spoke on the panel titled “How Can Novel Technologies and Innovations Be Created in an Environment of Consumer Mistrust, Anxiety, and Pseudoscience?” She and her fellow panelists broke down the mistrust and anxiety consumers face when exploring new innovations in the industry including generative AI, cell cultured meat, and GLP-1s.   The panelists shared three key takeaways for PR specialists to keep in mind when communicating novel technologies to consumers:   ✔ Innovation must be collaborative. While business is the most trusted to manage innovation, to be competent and ethical, it can’t go at it alone. Businesses must partner with governments and NGOs and address broader societal consequences, such as the impact on jobs and ethical concerns. ✔ When it comes to communication: Scientists and technical experts are the most trusted voices when it comes to innovation, but we must find ways to better explain the science transparently, engage in dialogue, harness peer voices, and address the challenges of misinformation. ✔ People need to feel like the future is in their control: Listen for concerns, be open to questions, engage in dialogue with multiple stakeholder audiences, including the public. Artificial Intelligence in Food Safety Artificial intelligence could be a valuable tool for the future of food safety. New research out of UC Davis finds that a technique using AI and optical imaging can quickly and accurately identify bacteria in food, making it a promising approach for preventing foodborne outbreaks and illnesses. The designed algorithm called You Only Look Once (YOLO, version 4) to detect bacteria is a simple, cost-effective and rapid approach compared to conventional pathogen detection methods. Time saving technology, detect the problem within three hours however the conventional methods needed several days for analysis. Once the food is processed, it can be tested and, on the same day, you can make sure there’s no pathogens and distribute it. It has the capability of differentiating features of various bacteria. It discriminated E. coli from seven other common foodborne bacterial species, including Salmonella, with an average precision of 94%. Although we tend to read a lot about the promises and potential threats of AI, it is definitely true for food manufacturing that implementing AI in a meaningful way is still hard.
