These aren’t regular potatoes; these are cool potatoes. Get ready to crush it—literally—with these crispy nuggets that bring a fiery flare. They’re so irresistible, you’ll be lucky if they make it from the pan to a plate! 1 1⁄2 lbs (675 g) baby potatoes 3 tbsp oil, divided 1⁄2 pkg, divided Portuguese Chicken Seasoning (Pack of 3) 1⁄4 cup plain 2% Greek yogurt 2 tbsp milk, your choice Preheat oven to 425° F. Line Sheet Pan with Sheet Pan Liner. Place potatoes in Multipurpose or Round Steamer. Cover and microwave on high 6–8 min. They should be tender. Meanwhile, in a small bowl, add 1⁄2 tbsp seasoning, yogurt, and milk. Whisk to combine. Set aside. Remove potatoes from microwave; toss with 2 tbsp oil and remaining seasoning. Spread in a single layer on pan. Using the bottom of a bowl or cup, smash potatoes down to about 1⁄4"–1⁄2" thick. Drizzle with remaining 1 tbsp oil and any oil that may be left in the steamer. Roast 10–15 min, until edges start to crisp up. Drizzle sauce on top; serve immediately.

Interestingly, this was the most commonly liked food by Females (84%) opposed to it being the 8th most commonly liked food by Males (74%) where the meats in a BBQ spread were more popular. Sunday dinner was a perennial favorite, bone-in ribeye steak. We don’t do that a lot - for both nutrition and cost reasons - but it sure is a treat. So good. But the dish I want talk about is the one on the left, potatoes au gratin. This is the second time I have made it. It’s an involved process and the first time I tried a couple of months ago I took out a chunk of finger using the mandolin. (User error.) Something like potatoes au gratin involves a cost-benefit analysis. Quite simply, is it worth the considerable effort? I could have roasted fingerling potatoes in a tenth of the time. No having to clean up the food processor. No creating a couple of hundred 1/8 inch potato slices, plus a lot of onion slices - and neatly layering them in the dish. The first time I did it, potatoes au gratin were a hit. Thinking of something to complement those nice steaks, I decided to I should try again - improve my skills. Other than boasting about a nice meal, what’s my point? As lawyers, we are always having to choose what projects merit special attention - more of our time and energy - and what can be handled more basically. Allocating time and resources goes with the territory of being a trial lawyer. Not everything you do can be the equivalent of potatoes au gratin. There are times when roasted fingerlings are entirely acceptable. (And they are pretty tasty too.) You have to make choices - and they need to be deliberate ones. Back to last night, the potatoes au gratin were delicious. Perfect with the steaks and the nice Bordeaux our friend brought over. 🥪 Planning to have sandwich for lunch? Here, data from Water Footprint Network shows how every single component of a sandwich can add up to the overall water footprint. A simple cheese sandwich requires about 56 gallons of water. Adding sliced turkey increases the water footprint to 148 gallons. Including a small bag of potato chips adds another 12 gallons, bringing the total to 160 gallons.
