When I work with clients on securing more predictable cash flow to sustain their business, sometimes we explore offering memberships or a subscription type services. For example, with distilleries that could look like members-only discounts on select spirits when customers pre-pay every month or a whiskey-of-the-month or beer-of-the-week program. In addition to giving recurring revenue, offerings like this encourage customer loyalty, too. A plan like this might sound like small potatoes, but remember that the timing of payments is essential. If you collect money at the beginning of the month for something you deliver at the end of the month, you get to use that money during the period of time in between. Shockingly, our recent data reveals a troubling trend: 60% of our restaurants were unaware of chargebacks on orders processed through platforms like Uber Eats and DoorDash. Worse yet, many don't realize these costs are deducted from their revenues, not the platforms'. Restaurants have 14 days to dispute with Doordash and 30 days with Uber Eats if they properly make the order and hand it out to the delivery driver. The rise of social media tutorials on disputing third-party food delivery orders is raising chargebacks for restaurants. Due to a lack of notification on dispute methods, unclaimed funds are being lost. It's alarming to see how much revenue is lost; 3-4% of orders per restaurant are chargebacks, varying by cuisine, size, and state. To avoid chargebacks, we recommend restaurants closely monitor transactions and use dispute periods. Educating staff on order accuracy and documentation can also help mitigate these issues.
Online chargebacks are not just a minor hiccup in the digital ordering system; they are a significant issue that cuts deep into many restaurants' already slim profit margins. While a 3% industry average for chargebacks might seem manageable at first glance, the day-to-day reality for numerous individual establishments tells a much different and more distressing story. Let's delve into some of the key challenges: Refund Misuse: We're seeing an increasing trend where customers exploit refund policies, leading to unjustified chargebacks that restaurants have to bear. Dispute Processes: The systems to contest chargebacks are often convoluted and time-consuming, adding more strain to restaurant owners and staff who already have enough on their plates. Excessive Costs: Beyond the immediate financial loss from each chargeback, the hidden costs, including administrative overhead and increased payment processing fees, can accumulate, further eroding margins. This issue demands more attention and a collaborative effort toward solutions that protect businesses without compromising customer service standards. If you’ve been paying attention to the receipt for your latest restaurant visit, you may have noticed an unlabeled surcharge on the bill. It will be about the equivalent of three percent and if you have the courage to ask your server, they will tell you that it is a credit card surcharge. As businesses increasingly tack on fees for paying with credit cards, many are asking if it’s time to switch to cash. Visa allows surcharges but encourage merchants to proceed with caution to not damage the customer experience. With too many loyalty programs offering a 1-2 percent effective rebate, the offer of a three percent “discount” for paying with cash is suddenly a competitor for a loyalty program.
