Enjoy this delicious Blueberry Popsicle recipe! Gather these ingredients: 2 1/2 cups blueberries(fresh or frozen), 2 cups natural greek yogurt, 1/2 cup light coconut milk. 1-3 Tbsp honey (to taste), and 1 tsp vanilla extract. Then follow these directions. Add blueberries to a pot on medium heat and cook down for 10 minutes, frequently stirring until the mixture begins to thicken. Let cool completely. Cilantro Lime Yogurt Sauce. You could try this as a replacement for sour cream, with tacos, drizzled over salmon, or as a dipping sauce. 1 lime zest of 2 cups cilantro 2 cloves garlic peeled ¼ teaspoon salt ¼ teaspoon pepper 1 cup Greek Yogurt ½ lime juice of Zest lime: use a grater and chopping board to zest the lime. Blitz: add cilantro, garlic, salt and pepper to the food processor and blitz for 4-5 seconds. Combine: add Greek yogurt to garlic herb mix and blitz for 2-3 seconds to combine. Then add lime zest and blitz. Squeeze ½ lime into sauce and blitz for 2-3 seconds.
