I’ve always enjoyed cooking shows, going back to Julia Childs: “If I can do it, you can do it!” At the peak of the pandemic, I decided to cultivate my cooking skills to brighten the mood for my family, and there was one tip from Gordon Ramsey that proved to be a small learning revelation. He demonstrated that when you are using a frying pan on a burner, you have some moves you can make for adjustments and managing the heat beyond simply turning a flame up or down. As he explained with his customary degree of educative intensity, the hot pan of course also retains heat and so for some time continues to serve as its own ongoing cooking surface independently of the burner and its flame. What’s the implication for cooking techniques and craft? It means that you can take the pan on and off the burner accordingly as needed based on what’s happening. It’s obvious once you know it, but with it now more apparent to me, it meant I could do more than simply follow timer and heat guidance from recipes: I could start to watch and respond dynamically to what was happening with the ingredients. Being able to understand more about the chemistry and how it contributed to delicious food meant that cooking started to become a more attainable skill.
