We are happy to share Silver Lyan Cherry Blossom pop-up segment was posted on the NBC4 website, featuring our bartender, Sam Nellis. The Hanami Pop-Up Collaboration with James Beard Rising Star Chef, Masako Morishita from March 19th-30th. Although the Hanami Pop-Up is fully booked, the closing party on March 30th, is walk-ins only with standing and dancing encouraged. The à la carte menu includes our Hanami Picnic Bento Box with spam musubi “onigirazu,” miso togarashi peanuts, and sesame zucchini pickles served with a split of Laurent-Perrier Harmony Champagne. Also featured are Tater Tots with shio koji ranch and scallions, Karaage Fried Chicken, and a Strawberry Fruit Sando.

Many bartenders, when creating cocktails, has concepts and recipes that, for various reasons, never make it to the menu or the bar counter. Often, these are experiments with unusual ingredients, original techniques, or simply ideas that don’t fit the current vision of the establishment. These are like hidden treasures, waiting for the right moment or inspiration to be modified slightly. Such “forgotten” cocktails can become the foundation for future innovative creations. Perhaps one day they will return in a completely new form, with a refreshed taste or serving technique, like a twist on a classic. In my case, that cocktail is “Back to the Future” – a project that has been in my mind for a long time but hasn’t yet seen the light of day. It’s a concept inspired not only by the movie but also by the idea of time travel – both to the past, where we use classic techniques, and to the future, where we experiment with new trends. “Back to the Future” may appear one day as a surprise, serving as a bridge between the past and modernity in the art of mixology.

Hong Kong's bartending scene has gained more recognition recently, now rivaling the longstanding reputation of restaurants and chefs both locally and across Asia. Bartenders today are focusing more on their personality, creativity, and storytelling as they pour drinks across the city. Unlike chefs who follow strict rules, bartenders in Hong Kong are taking a more artistic approach, using their drinks to express themselves and connect with customers. John Ng, the chair of Asia's 50 Best Bars academy, notes that personality in bartending in Asia has become truly key, with bartenders gaining fame and noteriety for their craft, much like tattoo artists or pop stars. Famous bartenders like Lorenzo Antinori and Antonio Lai have become well-known names, with their personalities boosting the success of their bars. Lorenzo’s rise to the top of Asia’s 50 Best Bars in 2024 shows just how much influence bartenders are gaining in the region. However, both Lorenzo and Antonio admit that bartenders still face challenges compared to chefs, who often get bigger budgets and more prestigious awards. On the other hand, Jay Khan, from COA, says bartenders don’t need to compete with chefs; he thinks that a bartender's craft is unique, and it’s about setting their own standards among the industry.
