“Consistency is king,” a phrase often heard in kitchens, and never has a truer statement been made. From McDonald’s to Rolex, and every successful brand in between, this principle holds firm. At City Larder, we embrace a flat hierarchy, fostering an environment where everyone is encouraged to question and check each other’s work freely. This culture minimizes mistakes and empowers everyone to voice their opinions. Natural leaders emerge, organizers organize, and workers work, all in sync. We believe in matching the person to the job, not the other way around. #teamwork #kitchen #chefs #chef #foodlovers #culture #hardwork #doublecheck

Competition or Collaboration? TLDR: Fostering collaboration over competition doesn't dilute individual excellence but enhances it by layering diverse flavors into the dish we call success. Unearthing the Secret Ingredient to Culinary Success. In the heart of a bustling kitchen, clanging pans and sizzling ingredients echo the age-old debate - is the culinary industry about competition or collaboration? Diving into any professional kitchen, one witnesses an intricate ballet of teamwork as chefs, sous chefs, and kitchen staff weave between each other to conjure up delectable dishes. Yet outside, culinary competitions and reality TV shows highlight the cutthroat costs of success, making us question what drives culinary excellence. 🔥 From the Heat of the Kitchen to Leading Teams Across Industries 🔥 25 years ago, my culinary management studies led me to an exhilarating journey as an Assistant Kitchen Manager at Montana's Cookhouse Saloon. Fast forward a bit, and there I was, a General Manager, steering through 12-hour shifts in a pulsating, high-pressure environment. The biggest hurdle? Keeping the team motivated – their energy, the service, the consistency of quality food, and above all, their morale. Here’s what I learned: ✨ Communication is Key: I made sure every voice was heard. We thrived on mutual support, especially during those intensely fast-paced hours. 🤝 Camaraderie Beyond Work: Knowing my team personally made all the difference. We weren’t just colleagues – we played sports, shared laughs at the bar, and built bonds that went beyond the kitchen walls. 🍻 Unwinding Matters: Post-shift, we’d grab a moment to relax and connect over a beer. It was our way of letting loose and coming together not just as a team, but as friends. These lessons weren't just about managing a restaurant; they became the bedrock of my career. As I transitioned to managing in the music business and then sales teams, the essence remained the same – foster a supportive environment, know your team, and always find time to unwind together. In the relentless pace of our professional lives, it's these human connections and moments of shared joy that fuel our journey. Let's remember to keep the human element alive, no matter the industry. #Leadership

3 communication strategies for managers I learned from binge-watching The Bear: Strategy 1: Call them as you see them. Right away in season one we see Carmy correct the staff when speaking to him: “Say, ‘yes, Chef.’” In turn he calls everyone on the raggedy team at the sandwich shop “Chef”: “It’s a show of respect,” he explains. The effect is instant and unmistakable; Marcus smiles privately and dives into his pastry work. Tina doubles down on the vegetables and positively glows. Takeaway: respect matters. People rise to the level at which you treat them. And even our so-casual-it-hurts-sometimes office culture, formalities can impart dignity. Tune in for #2 next week.

In the culinary industry, it is often said that your team is as strong as your weakest member. Every single role matters. From the dishwasher to the executive chef, each individual is crucial to creating a successful dining experience. If one person fails in their duties, it can have a ripple effect that impacts the entire operation. When one fails, we all do. Team building in the kitchen is essential, and it starts with establishing a culture of respect and understanding for all roles. It requires open communication and mutual respect between all team members, regardless of rank or position. Empower everyone on your team by reminding them of how much their role matters. Keep lines of communication open and create an environment where everyone feels valued and heard. So, let's commit to fostering this culture in our kitchens. Together, we can change the hospitality industry for the better. If you don't step in, who will? P.S. 👨🍳 When Collaboration Cooks Up Success 👩🍳 Imagine a master chef and their team in a bustling kitchen. The chefs on the front lines (your frontline team members) taste every ingredient and immediately know what will delight the patrons. Meanwhile, the head chef (mid-level managers and C-Suite executives) controls the menu and guides the kitchen’s course. Now, picture if the sous chef decided to change the main dish without consulting the head chef, or if the head chef introduced a new recipe without understanding the subtleties of the ingredients used by their team. The dish might end up a disaster! The magic happens when the entire kitchen staff collaborates: Combine Knowledge and Authority - Imagine the synergy in a kitchen where the chef who tastes every sauce (your frontline team) collaborates with the one who crafts the menu (your executives). By merging detailed operational knowledge with the power to make strategic decisions, you ensure that every move is informed and impactful. Foster Joint Decision-Making - Encourage all levels of your team to engage in the decision-making process, much like a kitchen brigade working together to perfect a dish. This ensures decisions are well-rounded and effective. Cultivate a Culture of Communication - Maintain open lines of communication, similar to the open kitchen where everyone can see and hear each other, ensuring swift, informed, and cohesive decisions. When every member of the team contributes their unique expertise, the result is a decision as exquisite as a perfectly balanced dish. Let’s cook up success together! #Teamwork #Leadership #BusinessStrategy #EffectiveCommunication

Giving Orders out to your staff? Or are you Giving Direction? Believe this—There is a difference. Barking out orders involves direct commands. No real consideration is necessary or needed. Giving Direction is a teaching-moment version. It’s guidance with allowing for understanding of the why, how, when aspects. Barking: “Hey John-grab a broom and sweep the dining room” Direction: “Hey John-let’s make sure the dining room is clear of debris, especially before seating our guests, grab a broom and I’ll show you a few things to look for” Makes a huge difference. Staff loyalty is fostered by encouragement, morale boosts, empowerment, sharing knowledge and respect. Leaders give Direction. #BeTheLeader
