I came across this study and found it particularly interesting, given Ethiopia's rich coffee consumption culture. Acrylamide, a chemical compound that forms in certain foods during high-temperature cooking processes such as roasting or frying, was the focus of this research. According to the study, although the concentration of acrylamide in coffee is relatively low, the frequent serving of coffee in Ethiopian culture makes it worth monitoring. Reproducing such a study in different contexts would provide valuable insights. Interestingly, the study found no significant statistical difference in acrylamide levels among different coffee varieties. What caught my attention is the observed reduction in acrylamide concentration as the process moves from roasting to brewing. This is curious because one of the common practices in coffee preparation at the household level is over-steaming or boiling during brewing. I initially expected the concentration to increase with such practices (assumption-if high temp cooking practices is the cause) , but the opposite seems to occur. I also wonder about how organizations like the WHO, FAO, and other research bodies at national level define "potential carcinogens" and what criteria they use to classify substances like acrylamide. Any thresholds? .\But, ....This article is worth reading now before you sip your first cup.

Please compare the results of this work with our previous similar work in 2021 as they didnt not cited it here. It is so funny to notice one of the co author is in both papers but he didnt even bothered to reference his own previous work on acrylmide in this current paper. Science grows when creating connections of efforts of past and current. Just it is ridiculous to me just trying to be "innovative" by deciding to "ghosting" works done in the past or previously. https://lnkd.in/e4XXvYmE
