Craving a classic American burger with a juicy patty, melted cheese, and delicious sauce? I know how to cook it! The burger is one of the most famous American dishes, which has become a cult. Burgers are sold all over the world from street stalls, in fast food, they can be found on the menu of restaurants with Michelin stars. But how was the dish that became a world culinary star born? Cutlets made of minced beef of a characteristic shape were prepared in the German city of Hamburg. Of course, other people also had such a dish. For example, back in the 12th century, Mongolian horsemen prepared something like beef tartare. The tradition reached as far as Germany via trade routes. Be that as it may, Hamburg beef cutlets with garlic, onion, salt, and pepper were highly appreciated by gourmets. They were also quite expensive considering the quality of Hamburg beef. When German immigrants began arriving in the United States in New York and Chicago, many made a living by opening restaurants. Hamburg steak, an Americanized version of the famous German dish, was often on the menu. It was often the most expensive item on the menu. During the Industrial Revolution, factory workers were fed Hamburg steaks. It was difficult to eat them while standing, so one creative chef sandwiched a meat cutlet between two halves of a bun (the name of the culinary innovator, unfortunately, is lost to history). How to cook the perfect burger? A perfect balance of juicy beef wrapped in tender melted cheese, spicy onions, crunchy lettuce, and a tangy-sweet secret sauce must be achieved. All this in the arms of a tender bun. Here are some secrets you should know: for a juicy burger, the ideal ratio of fat to meat should be about 80/20. Too little fat - the burger will be dry, too much - too fatty; do not mix the minced meat intensively, because the cutlets may turn out to be hard and rubbery. Light mixing until smooth is the key to juiciness; create an indentation in the center of the burgers before frying. During cooking, the meat expands and may swell in the center; flip the burgers only once. Frequent turning will make them dry; do not press on the burgers with a spatula, so that they do not release juice and do not lose juiciness.
