Problems Can Be Like A Chip On The Ground At the start of 2014, just over 10 years ago, I worked part time in a restaurant on Saturday nights and I learned one of the best lessons. Last night, I was reminded of the importance of that lesson. I was pouring some tortilla chips into a bowl and one of them hits the ground which gave me a flashback to my restaurant days. One Saturday in Baltimore, after the dinner rush, the owner saw some chips that had fallen to the ground which hadn't been picked up. While it was everyone's responsibility, he noticed that I had finished up my tasks for the moment on the bar side of the establishment. Before asking me to do things on the restaurant side, sometimes he'd layer in a story or context cause he knew that I responded to it and appreciated it. He shared how a problem can be like a chip on the ground. If you pick it quickly, or look to solve the issue immediately, you avoid the potential for it getting even more messy. Leave that chip (or problem) around long enough, it might get stepped on and smashed into a million pieces. People may walk over it, kick the chip dust around or accidentally spill some water on the chip pieces. What would have been one quick move has turned into sweeping and maybe even mopping. What would have taken a second has become a bigger ordeal. You leave enough chips around, you'll get crushed chip pieces everywhere and it gives a poor impression to the customer. Big picture, in all of our organizations and companies, we have chips hit the ground all the time. When individuals are managing a lot, moving quickly and making decisions with a lot on the tray, you may drop some things. The chips won't make a huge sound or shatter like glass but if you drop a few or even one and don't clean them up then you have a lot of potential mess. If you don't clean up that mess, at best, you're going to have people who may get the wrong impression of your establishment. At worst, you start building even more dirt and filth while also attracting the likes of rats and mice. The value in being proactive may feel like "more work" or "an inconvenience" if you're not the one who dropped the chip. Whether or not one person is responsible, each of us has to responsibility to the greater establishment to make sure that it stays clean. Everyone drops some chips, let's help each other out, right? Now if one person or group keeps dropping chips, and everyone else is covering, then that's a different conversation. Staying ahead of potential complications is always worth it. Hoping you aren't too worried or concerned about dropping the chips, whatever they may be, we've all done it. 2moI actually led a Webinar on this very topic a few years back. While a lot has changed since then, it still holds value. Food ended up being (at the time of my sale of the brewery) about 20% of our total revenue. Our average ticket went up to appx $26 from $19 and we were able to offer catering packages for our event room bookings.
