Sheraton Vancouver Wall Centre’s Post

More than 1,200 chefs from 55 nations competed for the Olympic title at the IKA Culinary Olympics 2024. The Sheraton Vancouver Wall Centre is proud to share Edouard Receveaux, Pastry Cook at the Wall Centre, represented Canada on the Junior Culinary Team, finishing with two silver medals in Restaurant of Nations and Chefs Table competitions. Learn more about Edouard by reading our interview below: 🏆 Describe what it’s like to win this achievement? Being awarded two silver medals feels like a rollercoaster of emotions. All the hard work the team put in comes down to one service and to come away with two medals is something we can be proud about. To represent our country at the highest level is a torch we gladly carry. 👨🍳 When did you decide to become a chef? I decided to move into the culinary world at the age of 18. After my first year of university I decided to switch as I did not feel satisfied with my current professional path. I moved to France and studied at Ecole Ducasse for three years before returning to Vancouver. 🔪 How do you describe your overall cooking philosophy? For me cooking should be natural. Highlighting the components in the dish and extracting the flavours as much as possible. Limiting waste and using the full extent of the product. Quality of the product should come first and what you do with that product defines a chef. 🍽 Describe one of your favorite work memories? One of my favourite moments was working a late plated dinner in the Pavilion kitchen. The group was complicated and the banquet manager had to call out the tables like we were picking up bills. It felt like I was back in Europe. Service went well and you could feel the satisfaction from everyone involved. ❤️ What connects you to the Wall Centre?  I feel connected to the Wall Centre because I feel valued and accepted by the people I work with. Congratulations, I am so proud of your accomplishments and especially working for Sheraton Wall Centre. Once you chose to follow your passion you began to see what the future holds for you in the culinary world. As a past supporter of the competitions I could feel the excitement from the moment you began your practices, meeting and working with the team, mentors and having Chef Bruno Marti as the eyes of the world looking at each Team practice. I have been following everyone on Facebook and am so proud of all the achievements each of you who participated in this World Culinary Competition.
