What is a circular restaurant? How does it operate? The main idea behind a circular restaurant is that there is no concept of waste, and the restaurant prevents waste from being created. It is a restaurant that 🍏 redesigns their supply chain, 🍏 engineers their menu with the principles of circular economy, uses all parts of ingredients when cooking delicious meals, 🍏 reprocesses the remaining waste e.g., composts the food waste and delivers it back to the farmers to fertilise their fields, 🍏 features a circular interior design: gives materials a new life that would be wasted, 🍏 embraces its social capital: nurtures the well-being of the employees and the community. I recently advised my clients not to train their chefs on sustainable kitchen operations. Yet. See, they had time to give them the online training on company values and policies pretty quick, but in-kitchen implementation and training where we make it real for them couldn’t be fitted in for another couple of months.* 🤨Isn’t it better to just get them trained on *something* rather than nothing? Actually, no - research shows that empowerment (like training on the company’s values and intentions) not backed up by resources (like making implementation possible tomorrow) is actually likely to make your teams' morale and performance in that area WORSE.😬 👉Your best chance of getting your teams on-board with your mission is to be ready to implement changes as soon as they’re trained on them.👈 I regularly hear from managers who care about sustainability, and more importantly, recognise its VALUE to their business. But despite being encouraged by senior leadership (and marketing!) to rally their teams and clients with lots of talk about how much sustainability matters to the business, they feel they have lost all momentum and reputability with their teams because they are never provided with the resources to actually 🤌Get🤌Things🤌Done🤌 ✅ Reusable tubs ordered before teams are asked to remove clingfilm ✅ New bin labelling ready before waste management procedures are changed ✅ Responsible suppliers implemented before they’re on the menu Potential risk of greenwashing accusations aside, the sense that their company is being dishonest with the outside world isn't just making employees roll their eyes - it's actively undermining the mission AND negatively impacting morale. 👇My advice?👇 ✋💚Hang tight on shouting about what you’re doing until you can show you’re putting it into action. 👀Before marketing with reference to your 'culture' or 'commitment to sustainability', be sure that your average team member can easily give examples of it in their daily work, and get your house in order internally before you start shouting externally. 💪Empower your teams with education about your sustainability mission AND give them the resources to practice what you're preaching. This ultimately comes down to having a solid structure for sustainability implementation operationally, not just within marketing or sales then hoping it will trickle down. Every job in your business can and should be a contributing to your ESG goals - they all have a role to play. And when they do, they'll shout a million times louder for you.
