Innovation meets Gastronomy! Just thinking aloud on this Saturday afternoon! Amid all the chatter about elections, AI, Biomes and whatnot, I found myself marvelling at how busy restaurants stay efficient. So, this is what I have witnessed , when my 11 year old decided to get busy on his youtubeshots while we were waiting for food to arrive, enter Bella Bot, our charming server at one of the restaurants we visited a week ago . With just two human waiters, Bella gracefully juggled 8 tables at once, that to me offered a glimpse into a future where innovation meets good food and good service. Wow! I know this is not me describing some type of wonder when we are pretty much waiting to shake hands with robots in every nook and corner, but the interesting question that I couldn't stop myself asking from the staff , ' What value you are getting by deploying Bella Bot' and in which department?' Typical of me , my son raised brow on my curiosity warning me of wasting precious time of a gentleman , however, he pleasantly explained to me.... ' Mam, we spend average of 20 mins holding a order until it gets completed by the chef , standing 5 mins for loading it onto the tray, then we take exactly 5-7 mins from main kitchen to the floor serving one table with only one tray , and then multiplying that with total number of orders. Ofcourse , in an industry balancing quality and speed, in a peak hour we need 7 waiters to exactly serve 7-10 tables simultaneously , with Bella Bot , we only have now two waiters and the Bot , as she could serve 8 tables in one go as each rack could hold 2 orders and she has 4 racks , so we have reduced the staff on the floor , and shifted them to the kitchen to improve time to serve.' Well! this isn't a business case building for a bot , but an interesting outlook on the industry that carries enormous pressure and few mistakes could cost one sinking business and closure eventually. In such an industry, this represents a truly revolutionary step forward. While concerns about robots taking over persist, it's worth considering how such innovations can be harnessed to dramatically improve efficiency and boost productivity when implemented thoughtfully. #Productivity #AI #Gastronomy #FoodForThought #Innovation #BellaBot

Unless you have been somewhere very remote, like the moon or the Pacific's Mariana Trench, it is hard to escape the constant debate about AI (Artificial Intelligence). And food has not escaped. This event caught my eye for two reasons: first, the composition of the advisory council who will be evaluating the key themes and focus of the 'Smart Kitchen Event'; second, the themes themselves, as they are very relevant tourism and hospitality issues in these difficult times which need urgent attention. The themes include AI's Impact on Food, Automation & Cooking, Food Discovery & Meal Planning.
