Being in Mumbai is chicken soup for my soul. On my last trip to the city, I tried to make the most of my short visit by meeting my competitor-turned-friend, Deepali. Like the excellent host she is, she treated me to General Mills India's latest innovation, Pillsbury Chicken Momos. Honestly, at first, I was a bit taken aback by the choice of the product launch by the company. But then my brain rationalized the launch. Pillsbury sells Atta, refines it further to make Maida, and that refined flour is used in making Momos. Simple forward integration of the product category. And also, of course, because the momo category in Frozen foods is on fire lately. One problem though. Pillsbury doesn't retail Maida. Neither do two of the other three biggies in the branded Atta category: ITC Limited and Cargill. Only Adani Wilmar Limited is an exception. I am certain a very sizeable number of Indian households, especially in the North, would have both Atta and Maida at home. The quantities would be poles apart though. The consumption divide is evident: while Atta might be between 5-10 kg, Maida won’t be more than 1 kg. While whole-wheat is a staple at home, Maida has disproportionately more usage in the industry. Bread has Maida, snacks have Maida, confectionery has Maida; and HoReCa—are you even a North Indian restaurant if you don't have at least five varieties of Naan on the menu? The more I thought, the more I realized that, for most Indians, Atta is 𝘨𝘩𝘢𝘳 𝘬𝘦 𝘭𝘪𝘺𝘦 and Maida 𝘣𝘢𝘢𝘩𝘢𝘳 𝘬𝘦 𝘭𝘪𝘺𝘦. This is reflected rather poetically when one notices Pillsbury has Maida products as part of its institutional Bakery and Food Services division. I doubt there is any other commodity whose processed form gets consumed at such a large scale. It reminds me of what YN Harari mentioned in Sapiens: "We did not domesticate wheat. They were making these fake spices and supplying them to retailers under various local brand names. A similar scam was uncovered in Gujarat where 60,000 kgs of adulterated spices were seized!! So every time you think you’re using healthy, nutritious spices, you might be poisoning your family with rotten rice, wooden dust, colored chemicals and a lot more… ☠ To lower costs, businesses often resort to risking the lives of our countrymen. And, this is the real face of GREED. Tragically, this is happening not just in spices but in the entire F&B industry, with >22% of the food being adulterated. Key essentials such as milk, rice, soap, detergent, turmeric and red chilli powder saw their prices increase by 10 - 20 per cent in the last year, revealed a survey by Kirana Club shared exclusively to ETRetail. Meet Akashdeep Dan and Sundeep Singh from Kolkata. They are the co-founders of Uncle Peter's Pancakes, which they started in 2019. Their goal is to bring high-quality, international-style pancakes to Indian households. To cater to the diverse tastes of the Indian market, their restaurant offers over 15 different types of pancakes. These include stack pancakes, filled pancakes, lava pancakes, and corn pancakes. They also have classic pancakes, as well as healthy, gluten-free, and vegan options. All their pancakes are made with the freshest and highest-quality ingredients, ensuring a premium taste even without using eggs. Uncle Peter's Pancakes has grown a lot since it started. They now have more than 40 outlets in 15 cities. These include 12 cloud kitchens, 25 quick-service restaurants (QSRs), and 3 kiosks. They plan to open more quick-service restaurants in other big cities. Out of these 40 outlets, 5 are owned by the company and 35 are owned by franchisees. When Akashdeep and Sundeep were looking for investment, they asked for 60 lakh rupees in exchange for 2% of their company. They were successful in securing an investment from some big names in the business world. Anupam Mittal, the CEO of Shaadi.com, Vineeta Singh, the CEO and co-founder of Sugar Cosmetics, and Namita Thapar, the CEO of Emcure Pharmaceuticals, all decided to invest in Uncle Peter's Pancakes. The final deal they got was 60 lakh rupees for 3% equity in the company, plus a 3% royalty until 1.2 crores is paid back. Individual portion packing material / container - Requirement of a food chain solution Our client, situated in Nagpur, is running a hotel and a few food and beverage outlets. We intend to operate on a hub and spoke model, wherein the menu items will be prepared FULLY at the central kitchen, blast frozen, packed in individual portion container, transported to outlets (within a travel distance of one hour), and stocked in chillers. Each portion to be taken out upon receiving an order, regenerated, and served in open condition for dine-in, and in packed condition for take-away. This is the operations model. Number of menu items: About 20, include India cuisine comprising of semi-gravy and gravy items in vegetables, paneer, chicken, mutton, and dals. Estimated number of servings per day: about 1000 (one thousand) initially, to be stepped up gradually. Additionally, about 1200 kathi rolls, in about 10 varieties are being currently sold through three different outlets, and we are looking forward to scale up to 3000 rolls per day. Requirement: Appropriate individual portion packing material / container, which will withstand receiving the food item in frozen or ambient temperature, can withstand stacking in chiller, and then withstand the regeneration, all through retaining the food item intact without any loss of consistency, flavor, moisture or any other parameter. We have tried out through blast chiller, blast freezer, combi oven and speed oven, and have near total requirements met, but loss in consistency and sogginess in the final product. We are looking for a practical solution based on our requirement and scale.
