Who has heard of miso? Do you know what it is and how to use it? If so let us know your favourite way of using it in the comments. Miso is a nutrient rich, fermented condiment especially popular in parts of Asia. It is a thick paste made from soybeans that have been fermented with salt and a koji starter. This fermentation produces beneficial nutrients, potentially boosting digestion, aiding the immune system and helping fight disease. Miso paste can be used to make sauces, spreads and soup stock, or to pickle vegetables and meat and brings great umami flavour to a dish. Although miso is traditionally made from soybeans, other ingredients may also be used to make it, including rice, barley, rye, buckwheat and hemp seeds, all of which affect the colour and flavour of the final product. The darker colours are generally linked with a stronger, saltier taste and the lighter colours sweeter and milder. I like to mix sweet white miso with tahini a dash of tamari and water to make a quick easy dressing/sauce. Since I talked about Chia Seeds yesterday, would you want to try my Chia Seed Pudding with Fresh Berries recipe? 🌞🍓 It's a perfect way to stay calm and enjoy the health benefits of chia seeds. Here's the recipe: - Ingredients: • 1/4 cup chia seeds • 1 cup almond milk (or any milk of choice) • 1 tbsp honey or maple syrup • 1/2 tsp vanilla extract • Fresh berries (strawberries, blueberries, raspberries) - Procedure: 1. mix chia seeds, almond milk, honey, and vanilla extract in a bowl. 2. Stir well and let it sit for about 5 minutes. Stir again to prevent clumping. 3. Cover and refrigerate for at least 2 hours or overnight for a thicker consistency. 4. Stock and bullion cubes are small but mighty. They give your food that savoury taste that makes the food more enjoyable But as small as they are the amount of sodium one cube contains is a cause for concern. I used to think I'd always need stock cubes until I started making my own stock using only wholesome ingredients. Two alternatives I've found to high sodium stock or bullion cubes 1. Homemade stock Celery, carrots, onion and chicken or beef. This is a hit with my family 2. Herbs and spices Fresh or dried works. The smell is just so great If you're watching your sodium intake, these high-sodium cubes should be the first to kick out of your pantry
