Trust. It takes a lifetime to build and can be lost in 5 seconds. I had never experienced this particular "flavor" of loss of trust. We had just completed a nice meal at a "good" restaurant in Seville, Spain. I had gone up to the bar to pay my bill. Then it happened. Right in front of me. The bartender took a bottle of water and topped off two of the beers he had just poured from the tap into 4/5ths full glasses of beer. Those croquettes I had just finished no longer tasted as good. Even though odds are I will never again even have the opportunity to patronize the restaurant, I will never, ever return. They lost our trust. I wonder how many others have observed this behavior and will post about it on yelp? And I wonder how long it will take for this cheating restaurant to be replaced by a restaurant that earns and keeps its customer's trust? I hope not long. Don't lose your customer's trust. I honestly can't say enough good things about all the experiences we have had on the Iberian peninsula over the last months. I consider this restaurant an outlier but useful to make a very serious point.

Example: Be relevant as an Aperitivo in an Italian Restaurant (Traditional) before venturing into a Fancy Cocktail Bar (Modern). Last night we celebrated my Moms birthday at Silver Social where we had an epic view of an empty ballpark (hey she can't help when she was born). I had picked this particular restaurant because my Mom is a big time local at the Silver Diner restaurant near her and this was a step up so I knew she would like it. Towards the end of the meal, none other than Founder Bob Giaimo stopped by our table to check on us and ask a few questions about how we enjoyed the meal and was it what we had expected. We gave him the history of growing up as a family and going to Silver Diner and commented on the quality of the food this evening being excellent with a very different vibe than the more casual Silver Diners with their massive menus, all day breakfasts and jukeboxes at every table. I also couldn't help but tease that this type of conversation was exactly what I help restaurants with every day for a living. Its always good to be reminded of why we do what we do.
