Harvesting juniper berries can be challenging due to their remote habitat and the need to climb steep slopes, making collection labor-intensive. Dear #wine and #technology lovers, we would like to point out a very interesting article on the #refinement of wine in the #depths, which takes advantage of underwater cellars to achieve unique preservation through the natural climate control of the #sea. An interesting idea that raises intriguing questions about wine storage and aging. Some of our clients, too, have adopted this winemaking methodology or are pursuing innovative projects related to the marine environment. Cantina Villa Medici: their first bottles of Custoza DOC Superiore were submerged in the depths of Pag Island for six months at a depth of 15 meters. Thanks to low light, high pressure and controlled temperature, the wine underwent incredible evolution, revealing unique notes and nuances. The bottles are checked by periodic scuba diving. #Azienda #Agricola #Arrighi: Through their project they explore the different stages of production of an ancient wine, following the traces of the myth of the wine of Chios. Particularly aromatic and pleasing to the palate, the wine acquires the presence of salt thanks to the practice of immersing the grapes in the sea, which are contained in baskets, with the aim of removing the bloom from the skin and accelerating the withering in the sun, thus preserving the aroma of the grape variety. #Tommasone #Vini #Ischia: their project takes into consideration the sustainability of the underwater environment, in fact they use weight elements lying unanchored to avoid disturbing the seabed. Storing the bottles on the seabed instead of in a cellar provides optimal conditions for aging the wine, producing interesting results and preserving the organoleptic characteristics, thanks to oxygen- and light-free aging at a constant temperature.
