For me, gastronomy is not just a complex combination of individual products and tastes. It is a whole philosophy based on a more conscious approach to products. The products created by the chef inside the restaurant reflect the concept of locality, which is important in the modern world. In addition, I try to play with time by studying various ways of processing food, combining culinary traditions from different countries of the world. All these unique concepts will be produced by the chef-led team in my kitchen. Dishes that will definitely be a real gastronomic discovery. And don't be afraid of foreign terms and new technologies. I will guide you on a wonderful gastronomic journey. My team is not just people working in the kitchen or living room. These are the ones who put in the effort to create the materials. I say: "It is very important for us to first create an ingredient and then find a dish from it. This is a very difficult path. But I believe that the future of concepts depends on people who do not look for easy ways." I was guided by this principle when building a team. There is a great, home-grown innovation able to address mandatory origin labelling for seafood and it involves lasers! #Australianmanufacturer Tasmanian Oyster Company Limited, with support from AMGC, has developed a CO2 laser able to etch a logo, or brand mark, directly onto the shell of seafood without damaging the flesh inside. Back in late 2020, it was first estimated that the solution could increase the “product to price density” of oysters by $5 per dozen, add $7 million to the Tasmanian oyster industry through the new authentication and marketing possibilities, and provide a $3.5 million increase in revenues to Tasmanian Oyster Co. through an estimated 25% growth in exports. Australian consumer ministers have voted to introduce mandatory country of origin labelling for seafood in hospitality venues. Once changes are in place, restaurants, cafés and other hospitality businesses will need to show if the seafood they sell is Australian (A), imported (I) or of mixed origin (M). This will help consumers make informed decisions about the seafood they buy. Businesses don’t need to do anything yet. We will work with the hospitality industry to help it adopt the new seafood country of origin requirements.
