It is time for Rhubarb! Now that April is drawing to its end Poland will be the next source for the red-stalked plant. Rhubarb in Poland is one of the first vegetables to grow in the open air in late Spring and early summer. Known for a sour taste and usually cooked with sugar Rhubarb is made into serval pastries; pies, tarts and in Poland a Bun crumble called “Drożdżówka z Rabarbarem” all popular in the summer months. They also make a Rhubarb drink called “Kompot Rabarbarowy”, served chilled but made by boiling peeled Rhubarb in water with sugar. A popular drink, apparently a part of every Pole’s childhood memories for summer. Peru is also home to a diversity of corn varieties, each with its own unique flavour and useand it boasts a whopping 55 corn varieties. Peruvian corn has a long history, as it has been grown since 1200 BC at least. Common in Peru, purple corn is used in chicha morada, a drink made by boiling ground purple corn kernels with pineapple, cinnamon, clove, and sugar, and in mazamorra, a type of pudding Chulpe corn, for instance, is a type of yellow corn that is often consumed toasted with salt. Another common variety is Choclo corn, which has large, steamed kernels that are often served as a side dish. And then there’s Cancha corn, which is roasted and eaten as a snack. No matter what type of corn you’re looking for, you’re sure to find it in Peru.
