When designing hospitality spaces, it's important to remember dining out is a sensory experience. In fact, researchers from the University of Manchester discovered that background sound, unrelated to food, can influence both perception of taste and enjoyment of food. All restaurants should have a level of auditory ambience, of which noise is a factor. However, the minimalist design trends of modern restaurants mean that the majority of contemporary establishments are designed with hard, reflective surfaces.
