Why do varieties matter? World Coffee Research recognizes that 12.5 million smallholder coffee farmers produce 60% of global coffee supply—and to sustain this, they need improved varieties. Better plants are a necessary technology in production systems that create a win-win for the environment, farmers, and producing countries—supporting climate resilience, sustainable livelihoods, and stabilizing export revenue. Pizza oven pollution has been in the news because of regulations in New York. In Italy, pollution from wood fired pizza ovens has been regulated for many years. What pollutants are regulation and how is that pollution measured? Techniques have been developed for measuring their emissions, including carbon monoxide (CO), carbon dioxide (CO2), various nitrogen oxides (NOx), organic gaseous carbon (OGC), and particulate matter. https://lnkd.in/gzawNzJ2

The most worrisome thing about a piece like this from The Guardian is that it points out that prices will tend to rise with the impacts of climate change from weather variability, extreme events, and even conflicts over resources that are bound to become more common. This is not unexpected, but there are investments and costs that will also occur to make the global food system more sustainable and resilient. Where will those funds come from? In the past much of this funding has come from the government and, to a lesser extent, private financial institutions. Governments will be stretched thin for all the things that will need to be financed to address both the causes of climate change and its impacts. Going forward, consumers will need to cover more of the true cost of the food that they consume. So, it is quite likely that the cost of food will increase not just as a result of weather variability but also to ensure that producers can respond to market demand for food in the future.
Coffee prices will rise even higher, says Giuseppe Lavazza

What is "green coffee"? The answer may seem obvious, but as coffee processors continue to innovate beyond traditional methods, the question becomes complicated. Is a fermentation aid- like a yeast inoculation- an additive? What about other adjuncts? Watch my colleague Mario Roberto Fernandez Alduenda's excellent Re:co talk on the subject. Great fodder for thought and discussion!
