The food and beverage industry has long relied on emulsifiers to create stable emulsions in various products. However, growing consumer demand for clean-label ingredients, perceived as healthier and more traditional, has sparked the development of new clean-label emulsifiers. Recent innovations include functional proteins, citrus fiber, enzyme blends, and ingredients like chickpea broth. Despite this progress, global events such as the Covid-19 pandemic, geopolitical conflicts, and logistics disruptions have created price pressures that challenge the adoption of clean-label trends. Meanwhile, consumer behaviors like stockpiling have underscored the need for product stability and longer shelf life, further driving demand for emulsifiers. GIRACT’s study explores the rise of both established and emerging clean-label emulsifiers, offering insights into their applications, benefits, and challenges. Through patent analysis, interviews with start-ups, and academic/industrial collaborations, the study profiles these ingredients and projects market penetration by 2029, identifying potential market leaders and laggards.
