In the search for high-quality vegan alternatives, achieving the right texture and stability is key! Our paper of the week explores how high-pressure homogenization, combined with hydroxypropyl methylcellulose (HPMC) as a stabilizer, can help produce vegan cream that closely mimics the consistency of traditional dairy cream.   🔍 Key Takeaways: · Phase separation was minimized at lower pressure levels. ·  Higher pressures or multiple passes led to over-homogenization, worsening phase separation. · All samples showed improved whipping stiffness—critical for consumer satisfaction.   One of the critical tools used in this process was the LUMiSizer, which played a crucial role in analyzing phase separation. By accelerating separation through higher gravity, the LUMiSizer provided valuable insights into the stability of different cream formulations. This allowed for precise ranking based on separation behavior, helping identify the ideal conditions for a stable, non-separating emulsion.   This study is another step forward in the development of plant-based foods, offering consumers high-quality, sustainable options. Ever wondered how lentils could replace milk in your morning latte? 🥛 For her PhD thesis, Stephanie Jeske from the University College Cork has been diving into the world of plant-based milk substitutes, particularly focusing on lentil protein isolates. Lentils aren't just packed with protein—they also show incredible potential as sustainable, nutritious alternatives to animal-based products. Using innovative techniques like ultrafiltration and isoelectric precipitation, Jeske worked on isolating high-quality lentil proteins that rival traditional dairy. And with the help of some cutting-edge tech, the LUMiSizer, she was able to measure the stability of these proteins in emulsions, ensuring high performance.
