🍂 It's getting cold and winter is just around the corner! At Shimadzu Europa GmbH, we're looking forward to the cosy days and the delicious flavours of the season. To sweeten the time, we're sharing our favourite recipe for a hearty pumpkin soup! 🎃✨ Ingredients: 1 medium pumpkin, peeled and diced 1 onion, chopped 2 cloves of garlic, minced 4 cups vegetable broth 1 cup coconut milk 1 tsp ground ginger Salt and pepper to taste Olive oil for sautéing Preparation: In a large pot, heat olive oil over medium heat. Add the chopped onion and garlic, sautéing until translucent. Add the diced pumpkin and ginger, stirring for a few minutes. Pour in the vegetable broth and bring to a boil. Reduce heat and let it simmer until the pumpkin is tender (about 20 minutes). Use an immersion blender to puree the soup until smooth. Stir in the coconut milk and season with salt and pepper to taste. Serve hot, garnished with a drizzle of coconut milk or pumpkin seeds if desired. Enjoy the flavour!
