A resilient and just food system can only be created by a systemic approach across the entire value chain. Last Monday we hosted an event together with CHANGING FOOD and Madland in Copenhagen. We invited professional kitchens and canteens to discuss: - why a holistic holistic approach to sustainability in kitchens needs increased focus on ecosystems, biodiversity, animal welfare, and the socio-economic situation of small-scale farmers and fisheries. - how professional kitchens have both, the opportunity and the responsibility to use their market power to induce positive change along the entire value chain. - how short & transparent supply chains are the basis for a holistic and data-driven approach to understanding, measuring, and communicating sustainability in kitchens. - that we need to adapt our kitchens, menus, and our underlying business models to the new normal. The discomfort of change is the price we have to pay for progress and transformation. Thanks to Jacob Nagel from Gastronomiet to tell us how they walk the talk by trading directly with small scale farmers and planning the season together with them. To Jesper Redecker Hansen from Fiskerikajen ApS to showcase how they continuously are challenging the status quo and go the extra mile of not only protecting our oceans, but also actively invest in strengthening these preasured ecosystems. To Marie Sainabou Jeng for being a wonderful host. And to Line Rise Nielsen, who reminded us that fundamental change in kitchens is possible if the entire organisation is willing to commit. What a great way to start the week! 🔥 Today together with Stig Romby Nielsen I had a pleasure to participate in the Alliance for Sustainability Targets in Professional Kitchens. An event organised by Madland and hosted by the great Marie Sainabou Jeng 💥 We heard some eye-opening and refreshing talks from Line Rise Nielsen (Food Policy Director at CHANGING FOOD), Jesper Redecker Hansen (Head of Sustainability at Fiskerikajen ApS) and Maximo Graesse (founder of Dagens). The panel discussion was completed with Jacob Nagel (Managing Director of Gastronomiet) and his humble but seriously great approach to making the difference at his kitchens. Transparency, commitment and data-driven persistent decisions with help of front runners at public and private large and small kitchens are THE KEY to a successful turn in a multifactorial change of food system(s). As a producer of clean label locally sourced organic flavour ingredients, Nordic Koji Company stands strong with the ambitions and commit to fully support the journey for each one kitchen willing to walk the talk and make the change around them. Events like the one today, with people open to listen, take critique and humbly reassess their next steps in running food productions are SO CRUCIAL to have a positive effect on the green transition.
