Is this a linear style game or a more open end like assassins creed, where you can roam the world?

Not AC style by any stretch of the imagination but definitely far more open than the first game. The first game was basically a marriage of Uncharted, Metroidvania game design and light Soulslike combat. This game still has those elements but throws in much larger maps, side stories, stores and the like. It does have collectibles like Ubisoft's open world games but it's not like their games in the sense that the collectibles are basically either character customization options (outfits, hair/beard styles, lightsaber or blaster parts) or currency that you can use to buy other customization options.

So, in other words, unlike AC where you tend to want to collect everything, thus making the open world feel less FUN, this game basically encourages exploration without the tedium. You can play the entire game without exploring if you want, but the exploration is there for you if you want some gameplay variety or are just interested in seeing whatever you can find.

Story is linear but you may freely travel and explore planets so you may advance the story enough to get necessary upgrades like dash and perch-hopping and then just do side quests or free roam

Also adding to Jakob's comment, if you want your character to evolve you literally need to explore as well, as you can unlock new skills or perks or skill points by finding secret essences, and there are also force tears that give a you challenge and if you're able to complete it you get a skill point. it feels like no challenge in this game is without a reward whether in the short-run or long-run

Yay the force tears. Some of them were downright infuriating. Like the zipline one. Also the Spawn of OGGDA or whatever the frog's name is, which feature two of them. I fought them in the first game and don't remember them being so annoying.
It's still very much a metroidvania, just a little bit more spacious
