Let’s break down how to identify the freshness of an egg and why it matters, particularly when it comes to egg whites and yolk. One of the most noticeable differences between a fresh and older egg lies in the egg white: • Fresh Eggs: The whites of fresh eggs are thick and viscous, forming a well-defined shape when cracked. The firm albumen holds its structure, which is ideal for cooking techniques like frying or poaching. • Older Eggs: As an egg ages, the whites become thin and watery.
